Who didn’t love risotto? It is probably my favourite side dish of all. A lot of Parmesan cheese and butter, qualitative white wine, a fast cooking method – what do you need more?

Classic Instant Pot Risotto Version

Risotto – this creamy rice dish is so simple but so flavourful and super delicious. I adore Risotto simply as it is, but nothing screams more perfect plates then a risotto served next to anything. It can be savoured next to any roasted or baked meat, to some seafood, or fish. The risotto will only add flavour and creaminess to any garniture. 

Why in Instant Pot?

Simply! I adore Instant Pot and the way it makes my food. Fast and smell-less. 

Classic Instant Pot Risotto VersionMy Instant Pot has the risotto option button, so the only thing I have to do is to fill my pot with all the ingredients. However, to obtain a super creamy and an authentic Italian risotto, for this time, I didn’t close the lid, but on the contrary, I have stirred the risotto continuously. The secret of making the best risotto is in the way you will continuously stir and adjust broth and parmesan. Once it has thickened and didn’t crunch the risotto is ready to be served.

I like risotto made in anyways; sometimes I like it with some saffron, in black from sepia, or only with lots of parmesan. All versions are delightful and super delicious. Because risotto is truly hearty and satisfying, I try to combine it with some comfortable and light dishes. I don’t want to overweight the plate, especially in the evening. A healthy tomato/arugula salad will only add flavour and perfectness to this risotto recipe.

What exactly is risotto?

Risotto is nothing else than round soft rice sauteed with a lot of parmesan, butter, and broth. A creamy/sticky dish cooked slowly with the finest result to simply savour and enjoy.

What kind of rice do you need for risotto?

Risotto is a primarily dish, originating from Italy, made of medium-grained Arborio rice or any other round soft rice nicely combined with butter, water/broth, wine, and cheese. A creamy texture and with a mild toothy crunch named al dente, but not too hard. 

Arborio-rice is one of the best options when making risotto at home as it is a starchy short-grain rice that needs no washing. Arborio rice offers a creamy consistency with a nice looking white rice.

Do you need to wash risotto rice?

The authentic Italian version will never suggest you washing the rice for the perfect looking risotto. The starchy texture, on the contrary, offers a risotto creaminess. I never rinse the rice I use for any risotto at home. 

When you rinse the rice’s starch, you will obtain a fluffy individual grains dish without creaminess. You can check one of this rice recipe on my blog where the grains are soft and crispies. 

Easy Instant Pot Risotto Recipe:

Classic Instant Pot Risotto IngredientsMaking risotto at home, especially in Instant Pot, is easy as it sounds. You will only need some qualitative ingredients, Instant Pot, and a glass of white wine to enjoy while cooking the risotto. Probably, it is my weakness when I have to add some wine to any of my dishes, and not to enjoy a glass by myself. 

The ingredients:

  • Arborio rice or any other round rice you have
  • Chicken broth but you will adjust the amount while it is cooking
  • Butter
  • Dry white wine
  • Parmesan cheese
  • Two cloves of garlic (optional for flavour)

If you have ever made risotto at home, you know that it involves a lot of stirring and that this is the key to one of the most delicious and creamy risotto. If you want to enjoy a tasty restaurant-quality risotto at home, then you have to follow some easy steps.

Stove-top risotto is always an option, but making it in Instant Pot, you will earn more time and less effort. 

Let’s start with easy and simple steps: turn on the Instant Pot and add the butter with 2-3 cloves of garlic to infuse the butter with a flavourful aroma. My Instant Pot has the risotto option button; however, I have stirred it frequently to assure it is well and nicely cooked.

In 1 minute add the rice and nicely mix until all the butter has absorbed. 

Then pour ½ of white wine with half amount of parmesan and mix gently. You have to make this process 2-3 times to assure that the rice has absorbed all the flavours from wine, broth, and parmesan. Stir frequently to avoid burnt rice. 

If you see that your risotto is too thick, easily adjust broth or water and some parmesan at the taste. For example, I adore cheese, and I always add as much as possible, but it is at your preference to add how much you like.

I don’t season the risotto at the beginning as the Parmesan is salty and try to avoid a too salty risotto. So I adjust salt at the end when the risotto is ready. 

The process of mixing the risotto and adjusting all the ingredients last about 25 minutes in the Instant Pot. Once it isn’t too hard, but still crunchy I turn off the Instant Pot, close the lid and let it sit for some 3 minutes.

Take a nice plate and nicely serve the risotto topped with some greenies. 

The risotto will taste delicious even if you add some mushrooms, chopped pancetta, peas, or anything else. I like to serve it traditionally, or next to anything.
