Rinse gently the fish fillets under running water then use paper towels to absorb the water. Arrange the cod fillets in a bowl, season with a pinch of salt, freshly ground pepper, paprika, and granulated garlic. Drizzle a few tablespoons of olive oil. Rub in the spices gently. Turn them over and repeat the process on the second side. Let the fillets soak in the flavors for about 10 minutes. It is the best time to preheat the oven to 360F.
Now cover a baking tray with parchment paper and lay down the fillets. Insert the baking tray into the oven and bake the cod fillets for about 20 minutes. Isn’t it easy? Don’t miss this delicious recipe of baked cod as it is truly worthy! While the cod is baking, let’s make the creamy blue cheese sauce.
How to make blue cheese sauce?
It is my all-time favorite sauce when it comes to fish dishes. The blue cheese sauce is creamy, a bit sour, and just perfect for delicate fish meat. The ingredients for the sauce are the following:
- Blue cheese. Choose Dor blue, Gorgonzola or Roquefort.
- Heavy cream. The fatter the better
- Dry white wine such as Chardonnay
- Spices like ground pepper and maybe a bit of salt
To cook the sauce you will need a saucepan. Pour the heavy cream into the saucepan and put it on the stove on medium-low heat. While the heavy cream reaches the boiling point, chop the cheese thinly. Now add the cheese to the saucepan and mix. The cheese will be melting in a matter of seconds. Mix well and keep everything on low heat. When everything has blended, pour in the white wine and mix again. Allow the alcohol to evaporate. Taste for salt and season with ground pepper.
Set the sauce aside, it is ready to be served. I promise it will not only meet your expectation in a matter of taste but will also stay in your heart forever.
How to serve baked cod fillets with blue cheese sauce?
Serve the fillets as soon as they’re baked. Pour some sauce on a plate and lay over a piece of the baked fillet. Pair this dish with a glass of chilled dry white wine and just let yourself be conquered by the delicacy of this dish.
You can serve baked cod fillets with other sauces, chimichurri is also a great companion. However, remember that chimichurri is a green, fresh sauce with a strong taste while the blue cheese sauce is warm, creamy, and delicate.
How to store the baked cod fillets?
It is best to consume the cod fillets immediately and keep them in the refrigerator for up to one day. It is possible to freeze cod if you have used fresh ingredients. However, always keep in mind that fresh food will deliver maximum taste and aroma.
