Air fryer vegetable platter is one of the best summer dishes. Healthy, colorful, and delicious veggies coated in a simple olive oil with herbs dressing.
A summer vibe is when you eat less but truly delicious dishes. Vegetables are not the fanciest dishes in the world; still, they pair extremely great with anything. I adore veggies and try to eat them as much as possible.
In an air fryer, veggies turn out to be super tasty with a nice grilled-like aspect. Many of my guests think my vegetable platter is made on a grill, and when they hear that they are made in my air fryer, they are pleasantly shocked all the time.
That is the moment I like about an air fryer: less mess, smell, and a good-looking plate. Vegetables cooked in an air fryer are perfectly grilled, browned, crunchy, and soft and tender on the inside. Some ideal veggies to enjoy any time of the day.
What veggies to cook?
Well, there isn’t a rule about what kind of veggies to cook. However, some vegetables need more time to get soft and tender. This is why some of the veggies I cut halves to avoid complications. For example, a carrot needs more time to get soft; so I cut them in four, while small bell peppers I have cooked whole.
What veggies can you use?
Any veggies you have at home are welcomed. Despite the most popular ones like onion, carrot, and peppers, I have cooked Brussel sprouts that taste amazing and zucchini.
Brussel sprouts taste bitter, but if coated in a dressing with more garlic or herbs, you make them taste fabulous.

The dressing…
This is a simple dressing I like to make when I cook veggies. Take a small to medium bowl and throw chopped parsley, cilantro, or a mix of them, some grated or powdered garlic, extra virgin olive oil, and seasoning. Keep it simple and easy. The key to a successful plate full of healthiness and colors.
How to make an air fryer vegetable platter?
First of all, you need an air fryer.
Preheat for 5 minutes to ensure it is warm before you cook the veggies.

If you are using small vegetables, keep leaving them as they are.
I have fried mixed veggies for 5-7 minutes at the highest temperature. This is the trick to obtaining some nice-looking, grilled-like veggies with a soft and tender inside.
Take out the basket and lay it on a nice platter, and enjoy.
These veggies are great next to grilled meat, fish, or simply as they are.
Can you store vegetables made in an air fryer?
Yes, sure you can. Take a kitchen container and layer all veggies and store for 1-2 days. Warm them in the oven or in the microwave and serve them. Veggies won’t be so crunchy, and fresh, nonetheless, you can store and use them on the second day.
Serve vegetables next to chicken cutlets, chicken meatloaf, pork chops, ham pesto sandwich, and other dishes.
Vegetables are always healthy and useful to eat. So make a habit to eat more of them, especially when it is their season.

- 1 zucchini
- 1 cup Brussel sprouts
- 3 small carrots
- 2 red onion
- Padron peppers
for the dressing:
- 1 cup extra virgin olive oil
- a handful cilantro
- a handful parsley
- salt
- pepper
Instructions
- Preheat the air fryer.
- Cut length-size or into the shape you desire the veggies. Use whole veggies if they are small and cook quicker.
- Fry mix of veggies for 7 minutes at the highest temperature.
- Take out the basket and lay it on a nice platter, and enjoy.
