- 1 eggplant
- salt and peppers to taste
- 2 tbsp olive oil
- 2 tomatoes
- 1 red onion small
- 2 mozzarella balls medium size
- 1/4 cup grated parmesan
Preheat the air fryer to 370 °F.
Grease with extra virgin olive oil on both sides of each slice of aubergine. Season with salt and pepper. Line the air fryer basket with parchment paper. Arrange eggplant rounds in one layer in the air fryer basket. Cook for 4-5 minutes and then flip and air fryer for another 4 minutes to ensure even cooking.
Meanwhile, chop tomatoes and red onion into small cubes. In a mixing bowl combine chopped vegetables with some olive oil and salt. Once eggplant slices are cooked, top them with tomato and onion mixture. Using your hands, gently break up the mozzarella balls and shred some parmesan on the top. Air fry for three more minutes, letting the cheese melt.
