Just like I have previously said, you need simple ingredients yet, a lot of passion because this recipe is all about love. Here is the list of the ingredients need for you to have total success in the kitchen. Don’t get scared of the quantity, it is calculated for an entire family of 4-6 people. If you need less, just divide the quantity. However, my advice to you is to prepare big portions because you’ll just never get enough. Thank me later. Here is what you need:

  • 2 lb of frozen shrimps (thawed). Deveined raw shrimps. Never buy precooked shrimps.
  • 2 cans peeled tomatoes
  • 1 cup tomato sauce
  • extra virgin olive oil to taste
  • 4-5 cloves of garlic
  • 1 tablespoon sugar. Yep, this will balance the sour taste of the tomatoes.
  • 1 tsp chili flakes if desired. I definitely recommend it
  • Granulated garlic 1 tablespoon
  • Dried thyme 1 tsp
  • Smoked paprika 1.5 tsp
  • 1 tuft of fresh parsley, chopped
  • Salt to taste

Place the frozen shrimps into a strainer and rinse in room temperature or cold water. Do not use hot water. Shrimps are very sensitive, you risk to have them damaged with hot water. Rinse the shrimps for about 5-7 minutes, always gently rotating to ensure they thaw evenly. When ready, drain the excess water and let them in a strain for a few minutes to make sure there is no excess water left.

How to clean shrimps?

Honestly speaking, this is the ugliest part of the process. I do not like peeling the shrimps, however, it is a necessary step, so let’s start with the hard part. To ease your task from the start, buy deveined shrimps, there are usually already cleaned from the intestines so there’s no need for you to do the “dirty” work. However, if your shrimps need to be cleaned, this is how you do it.

Remove the carapace and the tail, then, with the help of a toothpick remove the black fillet of the intestine located on the back. Now rinse the shrimp under cold water and dab with a paper towel to absorb excess water. Repeat until all the shrimps are clean and ready to be cooked.

Drizzle some olive oil in a big skillet. Until it gets hot, finely slice the garlic cloves. Now add the garlic to the skillet and let it become translucent. That will take about 2 minutes of medium-low heat. Now add the canned peeled tomatoes as they are, whole. Don’t worry, they will crush upon cooking, releasing a pleasant color and delicious aroma. Mix well then add the tomato sauce and stir again. Now it’s time to add the spices, and by that, I mean granulated garlic, thyme, smoked paprika, salt, and chili flakes. Let everything simmer on low heat for about 30 minutes. At about halfway, taste the sauce, if it is a bit too sour, add 1 tablespoon of sugar and mix.

Do not add the shrimps until the sauce is completely cooked. Why? Because the shrimps are cooked in no time. Consequently, if you overcook shrimps, you get blunt, gummy meat that is no good. Therefore, to get the juicy, soft, and fine shrimps, add them to the tomato sauce only at the end. Let them simmer in the red-blooded sauce for about 4-5 minutes on low heat. Turn off the stove and cover with a lid. It is enough for the meat to absorb the flavors and have them encapsulated to open up only when served. 

To crown this scrumptious and rich plate, sprinkle some freshly chopped parsley on top. That’s pure magic!
