Shrimp Avocado Salad

When thinking about fast and tasty to prepare dinner with minimum calories I always opt for vegetables with some proteins. And in most cases, the win-win products for me are shrimp and avocado. 

I am so addicted to avocado that I try to use it in all my possible dishes as it is very healthy and hearty. Shrimp Avocado Salad, or as many will call it salsa, is a perfect appetizer composed of fresh vegetables fried in garlic butter and tossed together to make an addictive final taste. Eating salads is so important, as it accelerates our metabolism and makes our daily routine to be more active and having a healthier life. I know many people that don’t eat greens with their meat, fish or other dishes – I simply can not imagine my dish without greenies or vegetables. I consider and know that salads with any aside dishes are the perfect combination of a healthy and longer life. 

This is one of the points, I do teach my daughter to eat a lot of them, especially the avocado. She adores eating raw avocado, except my salads. But this is a great point and trick for her. 

An easy to make Shrimp Avocado Salad/Salsa for dinner time or as an appetizer will simply be full of flavor, colorful, and so satisfying. It is so nice to eat healthily and to spend less than 20 minutes of cooking. 

Today, I will show you how I am preparing the crunched salad with grilled/fried shrimp. It is very easy, healthy and flavorful. I have made it hundreds of times, and I am constantly experiencing different tastes, spices, or vegetables. It is so various that you can not go wrong with its yummy final taste.   

Salsa is a very popular Mexican sauce – it is impossible to imagine the national cuisine of this country without it. Traditionally, salsa is made of tomatoes, herbs, onions, lemon juice, served with salted chips, tacos, burritos, or tortillas, as well as a sauce for meat and fish. I do prefer to serve salsa as a salad by chopping all the ingredients into medium-sized cubes. This bright, fresh, zesty and healthy salad recipe is great to be served with tortilla chips or as a simple dish. I adore to use it as a dip to feel and taste all the aromas from this full of flavor and colorful home-made salad. 

Also, you can combine several types of vegetables and fruits – tomatoes, avocado, cucumbers, corn, onions, celery and whatever you love to create a nice aspect, and of course delicious tastes. Traditionally Salsa is seasoned with salt, pepper, lemon or lime juice and olive oil. The most important thing about this salad or garniture is not to be afraid to experience. Pour generously shrimp avocado salad over your warm tortillas or nachos, with some lime wedges on the side. The smell of the lime next to this burst of aromatic flavors is unbelievable. You will do this kind of salad is perfect for sharing with your family, and this is the perfect complement to your grilled shrimp. 

How to make the Shrimp and Avocado Salad?

Peel and devein about 1 lb. shrimp ( if you do not have shelled ones). Season shrimp with salt, pepper, garlic, lemon juice, and some olive oil. Leave them for about 15 minutes to marinate.

Preheat the pan with 1tbsp of olive oil. When it is heated add shrimp and cook them for about 2-3 minute on each size.

When the shrimp are cooked on both sides, add them to the cutting board and dice them to medium size cubes.

Chop 3 tomatoes in medium size cubes, 2 avocados, 2 cucumbers, and 1 small onion.

Place all the ingredients on a plate and squeeze the juice of half a 1 lemon/lime over the salad. For Note: for a more authentic taste use the juice of a lime, the taste is simply irresistible and more pronounced. I adore the lime juice, rather the lemon one. It is irresistible. 

Finely chop half a bunch of fresh cilantro and stir together all the ingredients. I simply adore to serve this salad with tortilla chips or nachos, but sometimes I season it only with a hot chili sauce to feel all the ingredients more intense. 

Tips:

I always start with shrimps. I adore all kinds of shrimp, and when I have to choose which size I will cook, I prefer to buy the biggest once, because they are super meaty and their taste is more flavored. One more point, and probably the most important one, is to choose authentic chemical-free shrimp, to avoid unpleasant side effects. 

To save time and to make the process quicker, for salads and pasta, I buy shelled shrimp. If you can’t find shelled ones, do not worry and shell/peel them by yourself. After dicing avocado, add some drops of olive oil so that your avocado will remain fresh and green for a longer time.  

Adding cucumber in this salad will make it crunchy and at the same time lighter and fresher. Many, still prefer to add mango to this salad recipe due to its sweetly taste perfectly combined with lime, avocado, and garlic shrimp. It can be done so variously that you will love any kind of personal made salad shrimp salad. This Shrimp Salad, with its refreshing taste, will remind you of the tropics.

Ingredients
  

  • 1 lb shrimp
  • 3 tomatoes
  • 2 cucumbers

Shrimp Marinade

  • 1/2 lemon juice
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 2 tbsp olive oil
  • 1 clove garlic

Instructions
