Ingredients for cottage cheese pancakes
The main ingredient of the dish is not regular cheese such as parmesan, mozzarella, or cheddar, it is all about fine, sweet, and healthy cottage cheese. See the shopping list of the ingredients you need to feed a least 2 people:
- Cottage cheese 16 oz
- Egg 2 pieces
- All-purpose flour 5-6 tbsp
- Sugar 2 tbsp
- Salt 1/2 tsp
- Vanilla extract 1 tsp
- Butter 3 tbsp
What cottage cheese to use for the pancakes?
To get the soft and airy cottage cheese pancakes, you should always buy fatter cottage cheese. Never go for the under 5% fat cheese. I always look for the 9% fat consistency cottage cheese as it always turns out into perfect pancakes. The dough should be elastic so that when pressed, the pancakes do not crack in the pan, they should hold the shape. Follow my cottage cheese pancakes recipe and I promise you will get gentle, homogeneous, and delicious round circles under a dense golden crust.
How to make cottage cheese pancakes?
For the best results, make the dough for the pancakes starting by preparing the cottage cheese in a special way. For that, wipe the cottage cheese through a frequent sieve in a bowl. If the cottage cheese is too wet, flip it onto cheesecloth, folded four times, and squeeze.
Or you can blend the cottage cheese using a kitchen robot, it is time-saving and the results are perfect for the dough.Â
Take a large bowl and add the blended cottage cheese in it. Add sugar and a few drops of vanilla extract. If you don’t have that, you can use vanilla sugar. Then add a pinch of salt and mix everything well.
Beat the eggs with a whisk or a hand blender. Add the egg to the cottage cheese and mix using a spatula or fork.
Pour all-purpose flour into the composition. Stir with a spatula until a dough of uniform smooth consistency is formed. Let the dough rest for about 10 minutes. For the dough to be more modelable and for it not to stick to the fingers, you may place it in the fridge for about 10 minutes.
How to shape cottage cheese pancakes?
As a first thing, sprinkle some flour on the working surface of your kitchen table. Place the cheese dough on that surface and form a thick tube using your hands. It should be about 2 inches in diameter. If you feel the dough is too runny and the flour quantity is not enough, add a little more and mix.
Now slice the resulting tube into equal circles of about 0.5 inches thick. Roll each cottage cheese circle and leave them on the table sprinkled with flour before use.
How to fry cottage cheese pancakes?
Take a large frying pan with a diameter of at least 9 inches and heat it up. Add a piece of butter and let it melt. Add the cheesecake rolls in it and fry for about 2 minutes on each side until golden brown. Next, cover the pan with a lid and keep on low heat for 3 additional minutes to make sure the heat penetrates the heart of the cheesecakes as well. When done, take them out and place them on a paper towel so that the excess grease is absorbed. Repeat the procedure until you have fried all of the cottage cheese pancakes.Â
How to serve cottage cheese pancakes?
Serve the cheese pancakes hot or at least warm. One big advantage is that cottage pancakes can be served using numerous toppings. Add any of your favorite sweet sauces to them and get a thousand ideas for the most fastidious tastes. You may try the caramel, melted chocolate, berry jam, sour cream, fresh fruits such as strawberries, or the irreplaceable maple syrup. Enjoy your pancakes with a mug of fresh tea or a cup of cappuccino and start your morning marvelously!
