There are never too many desserts at my house. Different cakes, cheesecakes, biscuits, will always disappear in minutes. When it comes to whoopie pies my daughter loves helping me with them. This kind of American-sandwich cake is made of two soft rounds of chocolate cake (or different colourful rounds) with versatile fillings sandwiched between them. These Whoopie Pies are so tasty that even words cannot describe their real texture and sensations. I always opt for sweet, but not too intense sweet cakes.
My first experience making this great whoopie pies failed. However, experiencing more I understood my mistake and now I have to admit that my Whoopie Pies look simply irresistible and mouthwatering.
They are unbelievable especially when they cool down as it helps keep the frosting filling from oozing out the side as you take a bite. These chocolate sandwiches are easy to make, and fun to eat if you will follow my recipe. Even though the classic recipe dates back to the early 1900s, these old-fashioned whoopie pies are so soft, so chocolaty, so airy, that even today they look truly nice and modern. It seems that these cookies will never get old, and even today I love eating them so much.
We don’t have to tell about how tasty this treat is, the emotion of this delightful dessert is already in its name.
How do you make Whoopie Pies from scratch?
Cakes for whoopie pies are prepared quite simply. The main process starts with a quality chocolate batter. You don’t need any special ingredients to prepare chocolate whoopie pies but as with any other desserts, there are some tips that you must pay attention to.
Actually this rule is related to most cookie batter recipes. So, better use unsweetened natural cocoa powder, than Dutch-process one, as these two act totally different in baking.
About brown sugar, I also mentioned a lot in my previous posts that I prefer to use it instead of white granulated sugar (or at least to substitute some amount of it).
In a large mixing bowl using an electric whisk ( or any other kitchen appliances that you are us too: electric stand mixer, hand mixer) cream together on medium-high speed ½ cup of soft unsalted butter with 1 cup of brown sugar and ½ cup of granulated sugar until combined. Please note that the butter is softened, not melted. Now we have to incorporate eggs to this creamy mass. Add 2 eggs ( one egg at a time) and beat well. Now lowering the speed blend in 1 cup of greek yoghurt, ¼ cup of whole milk, and 2 tsp of vanilla extract. In a separate small cup combine 1tbsp of apple vinegar with 1 tsp of baking soda. Then gently incorporate it in the batter. When ingredients have combined evenly, start adding dry ingredients gradually. First, incorporate ½ cup of cocoa powder. Then add 2 ½ cups of all-purpose flour previously mixed with 1 tsp of salt. Mix well.
How to bake Whoopie Pie cakes?
Once you prepare a thick and sticky cake batter it is time to bake them.
Preheat the oven to 350 °F. Prepare two baking sheets, lining them with parchment paper. Set aside.
Drop with a 1-oz cookie or ice cream scoop, dough onto the prepared baking pans ( 12 cakes per pan), flattening slightly if needed. By using scoop you will get perfect sized cakes with the same shape. Make sure you arrange cakes about 2 inches apart as they tend to rise and to avoid sticking whoopie pies.
Bake them for about 15 -17 minutes. Then transfer cakes to the cooling rack to cool completely.
What is Whoopie Pie filling made of?
Fillings for Whoopie Pies can vary from traditional marshmallow filling to creamy filling or frosting. Here you can play with your imagination and use whatever you love.
My favourite in whoopie pies filling is the creamy cheese frosting. I think that the cream cheese infused in vanilla flavour is perfectly combined with delicious and fluffy cocoa soft cakes.
You will need again an electric whisk to make the fluffier filling. In a large mixing bowl cream together on a medium speed ½ cup of softened unsalted butter, 4 oz of cream cheese, and 1 – 1 ½ cups of icing sugar. Actually, you can add more sugar if you like more sweet filling.
Then gradually add 1 tsp of vanilla extract, and 2 tbsp of whole milk. Continue whisking until it becomes light and fluffy.
How to assemble Whoopie Pies?
When cakes have cooled completely transfer cream cheese frosting to a disposable pastry bag. Pipe frosting on the flat side of the cake and sandwich with another cake, and lightly squeeze together. Repeat for all cakes.
How do you store Whoopie Pies?
Keep assembled whoopie pies in an airtight container, in a single layer, no stacking in the refrigerator. Stored up to 3 days.
The unbaked batter can be easily stored, just cover it tightly in the refrigerator up to 3 days too. Before baking let it defrost to room temperature.
You can also easily freeze the baked whoopie pies for up to 3 months. But make sure you wrap them individually, otherwise, they will stick to each other. Before serving, defrost them overnight at room temperature.
Tips:
- If you do not have a cake or ice cream scoop for dropping the batter onto the baking sheets you can use a disposable pastry bag or a tablespoon.
- Make sure not to over mix the batter.
- Keep cream cheese frosting cool otherwise, it will be runny.
- Adapt filling to your taste. Use the versatile flavor caramel, chocolate, coffee, cinnamon, coconut, or any other you like.
