Why are my soba noodles mushy?
The best question to this simple recipe is why they really get mushy? Soba doesn’t contain dairy products and shouldn’t be cooked al dente as it gets mushy if it is cooked for too long. Add some drops of olive oil or soy sauce to make them look nicer and separate. If you drain water and leave them for some minutes, you will notice that they look mushy and sticky. So try to instantly pour the vinaigrette to them to avoid this unpleasant moment.Â
This sesame soba noodle recipe is easy to make any weeknight at home. It is totally easy, fast, flavorful, and tasty. You can top some lemon zest and ginger zest for some freshness and more flavor.Â
How to make Sesame Soba Noodles?
Making soba at home is simple as you only need to boil them. However, the keys ingredients here lay in the vinaigrette that I have made. Toasted sesame adds the final touch of elegance and flavour. I adore sesame in dishes; however, toasted for 2-3 minutes on a dry skillet, they make this dish taste heaven and toothsome.Â
The ingredients:
- ½ pack soba noodles
For the vinaigrette dressing:
- â…“ cup soy sauce
- 2 tbsp rice vinegar
- 1 cup toasted sesame seeds
- 1 tsp black pepper
- 2 tbsp honey or Agave syrup
- 1 cup chopped spring onion
- ½ cup chopped onion
- 3 tbsp sesame oil
- Two minced cloves of garlic
- 1 tbsp grated ginger
- Lemon juice
- 1 cup of parsley
Even though the ingredients for the vinaigrette seem too many, trust me, they make this dish so flavourful, so delicious, and aromatic.Â
While soba noodles are boiling, take a bowl and mix all the ingredients for the dressing.Â
Adjust at taste to obtain a dressing that tastes delicious and tasty. For example, I am using a pungent soy sauce, so I have added more honey. Ginger and lemon adjust at the end to be sure it has a mild flavour and lovely at the taste.Â
Take a skillet and toss sesame seeds for 1-2 minutes until slightly golden.Â
Drain the water and lay them on a big platter. Pour the vinaigrette dressing over and mix well until they have incorporated. Garnish with toasted sesame seeds for a better taste and result.Â
Serve as it is or next to anything.Â
For note: you can eat them traditionally with wooden sticks or with a fork and spoon.
