A delicious Panna Cotta is a gourmet dessert for days when you crave to eat something delicious at home. With just a few ingredients you can create a true cult with a fancy look.

I think Panna Cotta is one of the softest desserts which I have lately eaten. Delicate creamy dessert with a magical sweet taste, served cold, especially combined with aromatic fruits. It is a wonderful dessert, very easy to prepare, and quick to eat. Every spoon will make you savor the perfect sweet and sour flavor. Along with Tiramisu, another classic Italian dessert, this “pudding” is highly appreciated both by adults and the smallest ones.

Panna Cotta goes well, especially with fruit toppings. But, it also can be served in delicious various ways topped with caramel, nuts, coffee, and chocolate. In Italy, where it has its origins, this sweet treat is usually served with strawberry jam and coconut.

Regarding the classic recipe, Panna Cotta is made from cream, gelatine, granulated sugar infused with some vanilla. The sweet and pleasant aroma of vanilla relaxes and gives a genuine pleasure.

This delicious dessert can be a great option for a romantic dinner or a larger gathering, like a birthday party, baby shower or any potluck parties.

How to make Panna Cotta?

For today I chose to make panna cotta with raspberry sauce, but the idea is that only the cream recipe matters – you can match it with anything you love either caramel, fruit, fruit sauce, topping, or other fillings. The raspberry sauce will give Panna Cotta not only a spectacular look but also a refreshing taste.

In a saucepan sprinkle 2 full tsp of gelatin over 1 cup of whole milk and let stand about 2-3 minutes to soften. Heat the mixture over low heat, stirring constantly to dissolve well the gelatin. Steam for about 5 minutes. The main rule of the Panna Cotta recipe is that you should in no case boil the cream. Continuing stirring gradually add 2 cups of heavy cream, ½ cup of sugar, a pinch of salt and 1 tsp of vanilla extract. Whisk slowly ( about 5 minutes) until sugar dissolves completely. Remove from heat and let cool for 5 minutes, stirring every few minutes. Next whisking gently, slowly add 1 cup of sour cream. The mixture should look like a creamy mass. Cool it for 10 more minutes, whisking occasionally and then evenly distribute the mixture into 6 wine glasses so that they are 1/2 full. Refrigerate at least 6 hours before serving. Overnight will be the best. 

How to make Raspberry Sauce?

For the raspberry sauce, you can either use fresh berries or frozen ones. As it is not their season I have used frozen raspberries. But definitely in summer, the fresh ones will have an irresistible taste and smell, which will make your Panna Cotta truly luxurious. 

In a saucepan pour 2 cups of raspberries, 3 tbsp of sugar and 1 tbsp of lemon/lime juice. I like it zestier so I add 1 tbsp if you want it milder you can add just ½ tbsp or even skip it. 

Place a pan over medium heat and mix gently to bring it to boil. Cook berries for 5 minutes, until they look like a homogenous jam. Remove from the heat and leave it at room temp to cool down. Before serving spoon the sauce over the top of chilled Panna Cottas and decorate with some fresh berries.

How to make Keto Panna Cotta?

This truly elegant Italian dessert can be easily accommodated to the ketogenic diet. The preparation method is almost the same as the classic recipe. There are just a few rules that you should follow:

 

  1. Avoid sugar! Substitute sugar with stevia or sucralose or other sweeteners to taste. My favorite is stevia because it is a natural sweetener and comes from naturally occurring compounds from the stevia plant.
  2. Use heavy cream due to its high-fat content. If you are combining dairy products for this recipe choose full-fat sour cream or/heavy milk. 
  3. Use fresh berries. If you are following a keto diet you are looking to avoid extra carbohydrates. Jams and sauces are usually full of sugar, so better use fresh berries as they are low in carbohydrates.
  4. Vary with flavor. Do not be afraid to vary with flavor and color. You can play with flavors and beside vanilla ingredients, you can add to your Keto Panna Cotta lemon/orange zest, cocoa/coffee powder, almond extract or more exciting spices like saffron, licorice powder. Vanilla enhances the natural sweetness of the cream and balances other flavors.

How to store the Panna Cotta?

Along with other gelly deserts,  Panna Cotta can be stored in the refrigerator for up to 3 days. To keep its taste fresh, top it with fruit/berries or sauce before serving. Cover Panna Cotta with plastic wrap to avoid soaking the smell from other products that you have in your fridge.

Tips:

  • When preparing the cream, make sure you take a saucepan with a sufficiently thick bottom, so the dairy product will not burn.
  • Do not boil the gelatine, otherwise, it will lose its properties.
  • To make panna cotta lighter do not use only heavy cream, combine it with heavy milk or/and sour cream.
  • Always cover panna cotta with plastic wrap, when storing in the fridge. It will prevent a skin from forming and will not soak the smell from other products that you have in your refrigerator.
  • If you do not have fresh/frozen berries for sauce, use any jam you have in your kitchen. Just warm it a little and drizzle over top.
  • If you use low-fat dairy products, increase the amount of gelatin.
  • For a vegan-friendly version of Panna Cotta substitute all dairy products to almond, soy or coconut milk. But remember the less fat in the panna cotta, the softer it will be. Also, substitute traditional gelatin to agar-agar. Agar-agar is a natural vegetable gelatin counterpart.
