To clean the shrimp, first, rinse them under running water, then place them on a cutting board and remove the head. The external cleaning procedure doesn’t involve any additional utensils, all you need is your own bare hands. After you have removed the head, eliminate the legs and carapace. At this point,  you can decide to either leave the tail, or have it removed. That depends on the preparation you intend to do.  Once you have deveined the shrimps, it’s time to proceed to a very delicate performance, that is, to remove the internal intestine. To do so, make a fine incision along the back of the shrimp with a sharp knife and gently pull the intestine to remove it. Try to get it out at once without breaking it.

  • You can remove the intestine with a toothpick, insert into the meat of the shrimp, locate the intestine, and pull to eliminate it.

  • 500 gr of prawns
  • 400 ml of fresh cream
  • 1 glass of white wine
  • 2-4 cloves of garlic
  • salt and black pepper to taste
  • 1 tablespoon of unsalted butter
  • Parsley to taste

You can play with the quantity of heavy cream. If you like it saucier, add the amount indicated. If not, add less. I like to have more sauce because I go crazy for a loaf of fresh bread soaked in the creamy shrimp sauce.

How to cook the tipsy shrimps in creamy sauce?

Clean the shrimp from the shell and from the intestine. See the instructions above.

Take a big skillet and heat it on medium heat. Melt the butter and add the crushed garlic. Let it brown a little bit then pour in the shrimps. Sauté them for about 1 minute. Stir often so that the heat penetrates the prawns on all sides. 

Now deglaze with a glass of aromatic white dry wine. Let the wine evaporate, that will take up to one minute, then pour in the heavy cream.  Mix well and season with salt and black pepper. Let the shrimps saute in the creamy texture for about 1 minute. Turn off the stove and garnish with fresh chopped parsley. Remember that very short cooking is essential to obtain delicious prawns, otherwise, the meat will become hard.
