Burrata is one of the cheeses I simply adore and try to use it in many salad recipes, especially in summer. This kind of soft, juicy, and creamy cheese pairs so well with many veggies and create a flavorful and savoury taste. However, for this time I have decided that I wanted to make a new kind of salad that I have once tried and liked.Â
Some years ago, when I was in Greece, I have tried raw slices of zucchini topped with burrata cheese and drizzled with some olive oil. It seemed so simple, easy, and cheap at once, but once you try it, you quickly change your mind. The combination of fresh and sparkling zucchini mixed with burrata and some seasoning is simply you will get addicted to, especially on hot summer days. This simple salad you will surprise your guests, but they will adore it at once.Â

I adore salads, as I have stated in many of my posts, I adore cooking meat, fish, or stews and served next to any kind of salads. Are zucchini healthy to eat?
Zucchini, very much resembling a squash, is a healthy vegetable to eat and easy to prepare. Zucchini is a veggie-rich in vitamins, minerals, nutrients beneficial to health, vision, or eye-related problems. Also, it is low in calories so you can easily add it to your diet menu. A good quality zucchini should have a nice and intense green colour with a pale and soft colour inside. Try to buy vegetable at your local market to assure that the quality and freshness is the best. Â
Can you eat raw zucchini in a salad?
Not a fan of raw zucchini? Once you will try you will see that it has a pleasant, soft taste when combined with other ingredients. Zucchini is a type of squash and many culinary of the world uses this veggie raw. Many of us know that zucchini taste great when baked or fried, but many people still enjoy eating it raw in salads, dips, or wrapped in sandwiches. You have to try eating it raw, but in case you don’t like its taste, prepare it your own way. Veggies have to be always part of our daily menu.
How to make zucchini with burrata salad?
Zucchini Salad with Burrata is a new kind of salad I am preparing for my family. Coated in a simple dressing, but served with burrata cheese – this salad is toothsome. So simple, so quick, and so healthy.Â
The ingredients:
- 2 fresh and qualitative Zucchini. Trim the ends as they can be bitter and tough, and try to buy good quality seasonal zucchini. Also, choose tender, medium-size, and young-looking zucchini to make the most out of this raw and fresh salad.Â
- 1 burrata cheese (Italian soft creamy cheese).
- Cherries. Here you can add as many as you want the size of your salad. I adore small cherries as they taste sweeter and less watery.
- 1 red onion, but it is optional.
- 1 clove of garlic. Mashed one for a better taste, however, it is also optional. We simply like to enjoy that garlicky taste in a salad.
- Herbs.
- 2 tbsp olive oil.
- Basil for decoration.
Wash the veggies – the rule doesn’t change!
Start cutting the zucchini. You can do this with a good sharp knife, or with the vegetable peeler. I used a peeler as for me it is much easier. Slice zucchini super thin then cut halves the cherries. If you are using big tomatoes then cut them quarters.
Take a bowl or a plate and arrange nicely the zucchini slices and cherries. Top the burrata cheese, add some red onion circles and season with herbs and olive oil. For some additional flavour add some balsamic glaze. Decorate with fresh basil leaves and some extra drizzle of extra virgin olive oil.Â
Serve immediately.
Zucchini Salad with Burrata is a fresh and healthy way to simply enjoy summer flavours onto your plate. There are so many kinds of salads available today that it is a shame not to try as many as possible.Â

Summer Zucchini Salad with Burrata

Ingredients
- 2 zucchini
- 1 burrata cheese
- 10 cherries
- 1 red onion
- 1 clove garlic
- 2 tbsp olive oil
- herbs
- basil
Instructions
- Use a vegetable peeler and thinly slice the zucchini. Cut halves the cherries.
- Take a bowl and add the sliced zucchini, cherries, and top the burrata cheese. Pour the olive oil and season with herbs. Gently mix and pour some Balsamic glaze for an intenser taste.
- Decorate with fresh basil leaves and some extra drizzle of extra virgin olive oil. Serve immediately.

One clove of garlic, minced, is optional. I like to use minced garlic in many salads as it enhances the taste and adds more flavour. I topped it over my cherry tomatoes and with the creamy burrata it was more than just a perfect combination. Hope that I assisted you.
