Next, you will need the ingredients for the tahini sauce. These are tahini, lemon to squeeze out its juice, garlic, fresh parsley, and ground cumin. You will also need about 1/2 of cold or ice-cold water to dilute the composition. Oh, and the salt, don’t skip on that. Only a few ingredients and about 1 hour of your time will transform into the most delicious roasted potatoes with tahini sauce.
How to oven bake whole potatoes?
Preheat the oven to 350 degrees, you need a well-heated oven so that the heat penetrates evenly the whole potatoes. Thoroughly rub and rinse the potatoes with a cloth until perfectly clean. Considering that you will later serve the potatoes with skin, you need to make sure they are clean before you insert them in the oven. Use a paper towel to dry the potatoes. Excess water will create steam which will turn out into steamed potatoes instead of roasted, crispy potatoes we so much crave for.
Line a baking tray with some aluminum foil, then arrange the potatoes. Add some garlic powder and sprinkle a few fresh rosemary needles along with olive oil and salt. - 4-6 medium potatoes
- 2 tbsp olive oil
- 1 tsp granulated garlic powder
- 1 pinch salt
Tahini sauce/dressing
- 1 tbsp tahini paste
- 1/3 lemon juice
- 1 tsp granulated garlic or fresh
- 1 tsp cumin powder
- 1/2 tsp salt
- 1/2 cup water ice-cold
- 1 handful parsley finely chopped
Instructions
- Preheat oven to 350 degrees
- Wash well the potatoes, dry with a clean cloth or papaer towels
- Line the baking tray with aluminum foil and line over the potatoes
- Sprinkle with some olive oil, salt, pepper, and granulated garlic
- Insert into the oven for 50 minutes
- In the meantime prepare the tahini sauce.
- Mix all ingredients in a bowl. Dilute with water.
- Combine potatoes when ready with tahini sauce
- Enjoy your meal

I found 1/2 cup water to be way too much for only 1 tbsp of tahini. I ended up adding nearly 4 tbsp of tahini so that this mixture was not watery. I highly recommend cutting down on the water!
