Coleslaw is one of the most popular side dishes. You can often find it in any supermarket and restaurant, but you definitely should learn how to prepare it right at home! 

The steps for the best Coleslaw salad are very simple! It is often served next to some grilled meat but it also goes great in sandwiches.

If chilling the cabbage – this process will soften and at the same time will keep a crisp and pleasant cabbage crunchiness. Coleslaw is even tastier the next day after chilling in the fridge, so do not be afraid to prepare a big batch of this tasty side dish. 

What is Coleslaw?

Coleslaw, also known as slaw or cole slaw, comes from the Dutch that actually means “cabbage salad”. The classic coleslaw is just a shredded cabbage salad coated with a sweet based on mayonnaise or sour cream dressing.

Is coleslaw OK on keto?

Most classic coleslaw recipes, especially those commercials, go with a sweet dressing that includes some added sugar. As a result, these recipes are not keto-friendly.

Being low carb and loaded with healthy nutrients cabbage is an absolutely keto-friendly vegetable. It is among the most nutrient-dense vegetables. Also, mayo-based dressing is a good fat source.

What type of cabbage is best for Coleslaw?

For the best coleslaw recipe, I prefer to use white cabbage. Also, a good alternative is green cabbage, red cabbage, or Napa cabbage. If you prefer a colorful salad than you can opt for a combination of two varieties. For today’s recipe, I choose cabbage which is specific to the current season – white and red cabbage.

As for me, I consider coleslaw also a kind of salad, although it is often used as a side dish. Some sources say that the small difference between these two lays in the dressing and the ingredients. An ordinary cabbage salad is always made of a bigger variety of vegetables, if speaking about coleslaw then we try to add just carrots, onion, and rarely celery.

This keto coleslaw recipe takes just a couple of minutes to prepare and needs a handful of ingredients. Nothing can be more pleasant preparing some easy dishes when you are tired and out of ideas. A hearty and healthy salad is always a good option. See below the list of ingredients:

Make the Coleslaw Dressing:

Making keto coleslaw dressing is almost similar to regular coleslaw dressing. The main difference consists of no sugar added. Anyway, if you still crave sweetened dressing you can add some sugar substitute, for example, stevia.

In a mixing bowl combine 1 cup of mayonnaise, 2 tsp yellow mustard, and a little seasoning. For seasoning, you can use any you like. A good choice is garlic powder, black pepper, and a little bit of salt. Whisk well until smooth.

How to make Coleslaw from scratch?

When preparing a salad I try to avoid buying from the market selves any kind of salad mixture. So I can be sure of the quality and freshness of ingredients used in my dishes. Always choose fresh vegetables and green leaves for your salad. Once you will get used to this habit you will never go back to store-ready salad mixture.

Now, it is time for the best keto coleslaw! 

Shred the cabbage by chopping it thinly with a sharp knife or mandoline. A good alternative with less messing is a food processor with a shredding function. Transfer cabbage in a large mixing bowl. Then shred the carrot and add it to the cabbage. Toss some chopped spring onion to the same bowl. Prepare the dressing according to the instruction described above. 

Keto coleslawHere we are, the last step – add half of the dressing over the vegetables. Combine gently everything. Now is up to your taste, if you desire the coleslaw creamier then add the remaining dressing.

Send the best coleslaw to chill at least 40-60 minutes. Before serving sprinkle some pine nuts or fresh parsley.

  • 2 cups shredded carrot
  • 1/2 cup spring onion
  • 1 cup mayonnaise
