Delish garlic shrimp and creamy avocado topped on slices of cucumber are one of the freshest and yummy bite-size appetizers on your festive table. Ready in minutes, low in calories, and deliciously yummy.

As I mentioned in some of my articles, shrimp is the food that I simply adore and can eat as often as possible. This is why I always try to read more shrimp recipes to better my culinary vocabulary. I love food that is super yummy and has fewer calories – such a perfect balance!

Shrimp, or scampi, goes perfect with lots of other dishes. It depends on your imagination to pair it with anything you like. This recipe appetizer I am presenting today is easy to make, mouth-watering and looks perfect on a party table. These bite-size appetizers will always be a hit on your table as almost all people adore them. There is no left appetizer on the plate on my table :), even my daughter adores them.

These shrimp appetizers are similar to the shrimp avocado salad I have made before, you can check the recipe here. If you adore that salad, then you will find fun making these best appetizers. Made only of few ingredients, these mouthful shrimp appetizers will be such a crowd-pleasure. 

How to cook aromatic shrimps?

Shrimp is cooked easily and quickly, so the hint here lays on the best marinade you soak them in. I like to marinate my shrimp in some oil, lemon juice and zest, paprika powder, salt, and pepper. When I have more time on cooking I leave them about 20 minutes to absorb all the flavors, in case I want a quicker process I marinate them 5-7 minutes.

I adore cooking shrimp in butter with garlic. The aroma is simply irresistible and delicious. So, I cook the shrimp in some butter with 4 cloves of garlic for about 2 minutes on each side. It depends on the size of the shrimp – if I cook prawns then I fry them 3-4 minutes.

When the shrimp are roasted and aromatically done I squeeze some drops of lemon juice before topping them on the cucumber. 

How to make shrimp avocado appetizers?

Before cooking the shrimp I start with the cucumber.

I wash it and wipe with a paper towel. I have used one big cucumber to have more slices. Separately in a bowl, I mash the ripe avocado with some drops of olive oil. If I have a tomato I add it to the avocado, if not then it is okay. Here you can add red onion or chopped garlic for a more pronounced taste. I skipped it, as I cooked the shrimp in garlic.

When all the products are almost done, I start layering the ingredients. 

I take a slice of cucumber grease it with avocado puree and top the garlic shrimp. Garnish the appetizers with some dill. 

So easy, so simple, but so delicious. I really adore this quick appetizers as it takes no time to make them, but the result is mouthwatering.

One big size cucumber, half a pack of scampi, 4 cloves of garlic, spices, olive oil, and butter.

For the marinade, I have mixed the spices with some lemon juice, olive oil and leave them to marinate for 15 minutes.  

Recipe tips

  • You can use prawns instead of scampi. The only difference here lies in the price they have.
  • Use tomatoes, red onion, or garlic in the avocado puree.
  • Fry the shrimp in olive oil if you want them less caloric.
  • Also, you can use mayonnaise on the top of any appetizer for another kind of taste. 
  • Avoid frying the shrimp for too long as they will become rubbery.

Ingredients
  

  • 1/2 pack shrimp
  • 1 avocado
  • 1 big cucumber
  • 1/2 lemon
  • 4 cloves garlic
  • 1 pinch paprika
  • 1 pinch salt
  • 2 tsp olive oil
  • 1 pinch pepper

Instructions
 

  • Wash the cucumber and wipe with a paper towel. Cut slices about 4mm.
  • In a small bowl mash the avocado and add some drops of olive oil.
  • Take a pan and melt some butter and 4 cloves of garlic. Fry the shrimp about 2 minutes on each side.
  • Start layering the cucumber slices with avocado puree and garlic shrimp.
  • Garnish with some dill.
  • Serve immediately.
