This best cucumber salad is very healthy, low carb, and tasty with just a handful of ingredients. It is a light and fresh salad to nicely complete a party table, ready in just a few minutes. My husband doesn’t like garnitures such as buckwheat, mashed potatoes, he adores green salads with meat, fish, or seafood. This is why I try to make different kinds of salads and try to always invent something new and super delicious.  

Should we eat cucumbers? Are they healthy?

Cucumbers are a healthy green veggie that should be eaten as much as possible. It is a great vegetable full of fibers, minerals, and vitamins. Also, it is a low-calorie veggie ideal to be used with other ingredients. One more great point about cucumbers is the amount of water it contains (95% water). A very good hydrating veggie that can lower the sugar levels, and a great ingredient for eye wrinkles. My mom is always placing some cucumbers slices (fresh ones, and only in summer) on her eyes for 20 minutes. Such a nice result. 

One more advantage it has is the skin – try not to peel it as it contains a lot of good vitamins. I know many people that don’t like cucumber’s skin and peel it but try to leave it and make delicious and juicy salads.

It is not hard to choose best-ripped cucumbers. They should be firm to touch, dry, with a nice dark green color, and rounded right to the ends. In summer, you will have one of the best tasting cucumbers with a fresh aroma and ultra crunchy. However, in winter try to select small to medium size cucumbers, and try to avoid yellow spots as this indicates that they were harvested too late, or aren’t tasty.  

How to make cucumber salad?

For this great cucumber salad, you will need just a handful of ingredients. I think that almost every woman has some cucumbers, onions in the fridge, and some dressing. 

Cucumber Salad with Avocado and mayoTake a large cutting board and finely cut round slices of 5 medium cucumbers. Optional, but one of the great ingredients I always try to have is the avocado. You can skip it if you don’t have it, but it only makes better your salad if you add 2 ripe and smooth avocados. 

Take a bowl and add the cucumbers, the chopped avocados, spring onions, some fresh dill and mix well by dressing the salad with the mayo. You can add here sour cream, plain yogurt, wine vinegar, or anything you like more. I always try to add my home-made mayo when I have such possibilities.   

Season the salad with salt and pepper, drizzle some fresh lemon juice and serve it.

This cucumber salad is made of my home-made mayo dressing. So easy, and much healthier as I know how it is made, and of what ingredients I have used.

Mix 200 g of regular oil with one whole egg (30 seconds), then add 1tsp of mustard and ¼ of lemon juice. Blend all these ingredients no more than 1 minute and et voila, the best home-made mayo is ready to be added. 

How to store?

This cucumber salad is served cold this is why you can easily store it in your fridge, but not for too much time. Because cucumbers contain water they release it in your salad, so if you will store it for longer you will have a mashed salad. However, you can slice up the cucumbers a night before you will make this salad, place them in an airtight container, and mix with the dressing before you serve it. This is such an easy and quick salad that doesn’t need to be stored. Enjoy it fresh and green.

Recipe tips:

  • Skip avocado if you don’t have it, or don’t like it.
  • Plain yogurt, sour cream, wine vinegar or simply a zesty sesame dressing can also be great to this salad.
  • Red onion or spring onions. 
  • Do not wash cucumbers when storing them as they will spoil.

Ingredients

  • 5 cucumbers
  • 2 avocados
