To keep it fresh and green I never pre-cook it before using it in this recipe. Just wash and dry spinach well before adding to the casserole. If you are using frozen spinach then first leave it to thaw at room temperature in a colander and drain well. Then squeeze it to remove excess water.

First will go in the cream and the cream cheese. When you see them well-incorporated add shredded mozzarella cheese, bread crumbs, and shredder nutmeg. A touch of nutmeg adds a little something special to this spinach casserole. Stir ingredients to combine. Last, add spinach and mix it all together.

Preheat the oven to 375 °F. Grease with butter and then sprinkle with some breadcrumbs a 9×13 inch baking dish. Transfer spinach & cheese mixture into prepared dish. To add the perfect texture top the casserole with almond flakes. Alternatively, you can top with grated parmesan cheese or extra breadcrumbs.
