Generally speaking, I am a mushroom fan – I adore mushrooms cooked in any way – from simple mushroom omelets to stuffed or grilled ones. How to make Garlic Mushrooms?
Choose the best mushrooms for this recipe. I used White Button Mushrooms but it is okay with any other kinds like Portobello, Maitake, Enoki, famous Chanterelle or Porcino – all of them are great for this dish. It is important to have them fresh, soft, and nice-smelling.
I wipe my mushrooms well with a wet paper towel to remove dirt and debris. Lightly rinse under cold water, but do not wash them as they absorb too much water just like a sponge and they lose the great taste and don’t turn brown while cooking. Set aside thoroughly on a pat dry paper towel to make sure they don’t have any water on them.
Meanwhile, I mince 10 cloves of garlic and heat the skillet at medium heat. In the skillet, I melt 150 gr of butter and throw into it the smashed cloves of garlic. When the nice aroma from the fried garlic is all in the air throw in the mushrooms. Saute the mushrooms until browned (about 6 minutes on each side) and season with garlic salt and pepper.
When the mushrooms are ready to be served (about 10 minutes cooked) I garnish them with some fresh spring onions and cilantro. Serve them immediately warm and aromatic. This is such an easy and quick recipe – one of our favorites.
How to clean mushrooms?
I know that many people still use to wash the mushrooms. Well, sometimes if they are too dirty I may wipe them a little, with a wet paper towel, but never wash them. The mushrooms will absorb too much water and they will lose their taste and will become too aqueous. When the mushrooms are ready to be cooked, I cut the stems and use only the lid.

- Heat the skillet at medium heat.
