I fondly remember the best meatballs my mother made when I was little, we called them fritters balls too. Even though they had flour and a lot of bread crumbs, they were so tasty. They always came out so perfect, balanced taste, tender, and absolutely delicious.
For about two weeks I have been thinking about making some meatballs but in the keto version. Since following the low-carb diet, I had to review many classic recipes and this recipe for keto or low-carb meatballs was among the first with great successes. Today I crave some soft and juicy meatballs – not dry ones – and a genial idea come to my mind. So, as not to complicate with what kind of meat to use I grab some Italian sausages. They are already full of spices and aromas, with a balanced quantity of fat. There is no secret I just skip the breadcrumbs or bread and played with other ingredients. I think I succeeded with this recipe and taste is simply irresistible.

The advantages of fatty meat:
The advantages of keto meat dishes are that you can easily use meat with a higher fat content – pork shoulder, pork belly, duck meat, chicken with skin, etc. You will realize and surely appreciate fatty meat as if cooked correctly it even makes the dishes more flavorful, juicier, and tastier. Haven’t you tried our Keto meatloaf or Crispy roasted duck yet? Okay, and if you are not flowing keto diet or low carb diet, do you think that Hasselback potatoes will taste better with lean meat?! These recipes and many more prove us that fat – with no doubt in balanced quantities – only improves any dish.

How to make Keto Sausage Balls?
I use to make a big batch of sausage balls and use then for meal preparation throughout the busy week. They taste great as served alone or paired next to healthy carbohydrates as salad or vegetables for any meal. This dish could be reheated easily – oven, microwave, Instant Pot.
As I mentioned it is super easy to prepare recipe, you have just basically to dump the ingredients in a bowl and combine! So in a large mixing bowl mix: ground sausage meat, almond flour, shredded cheddar cheese, grated Parmesan, garlic powder, onion powder, smoked paprika, and some salt and pepper (this is up to your taste, as sausage meat can be salted enough). Just dive your hands in there and combine everything well.
Once the balls dough is ready grease your palms with some olive oil and start forming the meatballs by rounding meat in the hands. Another method of shaping perfect and the same size meatballs is using an ice cream scoop. A regular spoon could replace scoop easily, although I need some time to learn to handle it.
I use to prepare the balls of meat in advance and then just to fry them all at once. So, take a sheet of parchment paper and lay it on the table. Grease it a little with oil. Shape all balls.
Heat up a large frying skillet with 2 tablespoons of olive oil. Then add the balls carefully one by one to the pan. Fry the balls on medium-low heat until they look crunchy and golden-brown color. Turn balls on the other side. It will take you up to 7-10 minutes on each side to be cooked (in dependence on the meatball size).
How to serve Keto Sausage Balls?
Once the keto sausage balls are fried, serve immediately. Pair it next to Creamy tomato salad, Carrot salad in a creamy dressing or better Keto mashed cauliflower, and enjoy a delicious meal. A dipping sauce that will perfectly accompany keto sausage balls is Homemade keto buffalo sauce.
Sausage balls’ leftovers are too tasty not to be used. Add them to your Instant Pot, top with a sugar-free BBQ sauce or sour-cream and sautee for some minutes.
Store Keto sausages balls in an airtight container in the fridge for up to one week. This dish is freezer-friendly, so if you are using this method this recipe is for you.
Tips:
- If you prefer spicy dishes use spicy sausage or extra chili flakes.
- Most Sausages are not keto-friendly. So, make sure you check the label and choose the lowest carb count sausages.
- If you have almond (nuts) intolerance substitute almond flour with coconut one.
- This tasty sausage balls recipe is a great make-ahead option. You can store either ready-cooked balls or raw batter.
- If you are trying to avoid frying you could bake Keto sausage balls in a preheated oven at 350°F.
