Pesto. Always reminds me of Italian cuisine and its famous dishes. A refreshing basil sauce that incredibly tosses with pasta, in sandwiches, with chicken meat, or roasted sea bass. I have finally nailed a perfect tasting homemade pesto that is finger lingering. The aroma it has is really mouthwatering.Â
Nowadays, in stores, there are a lot of pesto sauces available either bio, organic, or regular. But, when it can be made in just 5 minutes at home, then the reason for not making it is simply inexplicable. I have tried some bought pesto sauces. They are okay, but at home, I try to use the freshest and most aromatic basil leaves, pine nuts, the best pecorino and parmesan cheese to obtain one of the most delicious pesto in the world. My family adores that sauce greased on some fried meat or fish, this is the reason why pesto sauce is never missing from my kitchen.Â

I am making homemade pesto sauce in medium quantities as it saves me much time when I am without imagination what to cook. A simple salad, sandwiches, or pasta, pesto is always an escape for me in my kitchen.Â
I store the pesto sauce in my fridge for weeks. The secret lies in covering the pesto with a thin layer of olive oil to keep the herbs fresh and juicy. I was always doing this method as I taught it from my mom. Â

What is pesto sauce made of?
Pesto sauce is as simple as it sounds. Just a few ingredients and you can serve a homemade pesto more healthy and tasting-better. Pesto is a great add-in to pasta, in sandwiches, to meat, fish or simply as a dip.Â
The ingredients:
- ½ cup of nuts (I have used pine nuts as I adore them more in pesto)
- 4 cups of fresh basil leaves
- ½ cup of Pecorino cheese
- ½ cup of Parmesan cheese
- 2-3 cloves of garlic
- Lime juice 1-2 tsp at your taste
- Sea salt and pepper at the taste
Take your kitchen hand blender and add all the ingredients in. Start blending all the ingredients and slowly drizzling in olive oil until you obtain a smooth consistency. So simple you will obtain a great-tasting homemade pesto with an irresistible aroma.Â

How to make pesto sauce allergy-friendly?
I am always making the pesto regular way as in my family I don’t have allergy persons to pesto. However, in case you have someone that has an allergy from some ingredients then you should alter the ingredients:
Skip the nuts with some seeds such as sunflower or pepitas. Skip the parmesan, or add some nutritional yeast. In case you are a basil-allergy person, skip the pesto sauce :).Â

Ingredients
- 1/2 cup pine nuts
- 4 cups Basil leaves
- 1/2 cup Pecorino cheese
- 1/2 cup Parmesan cheese
- 3 cloves of garlic
- 2 tsp lemon juice
- sea salt and pepper
Instructions
- Wash the basil leaves and with a kitchen towel wipe them.
- Take a hand blender and add all the ingredients in. Start blending all the ingredients and slowly drizzling in olive oil until you obtain a smooth consistency.
