First, you will have to wash and remove the legs. Use a good cutting knife and finely cut the shrimp’s back to pinch the greyish line which is the digestive tract. Pull and easily peel the shell off. As the name of the recipe inspires, Shrimp salad is served cold. This is the advantage of this recipe that it can be easily done in advance. This is a cold shrimp salad, but truly hearty, colourful, creamy, and juicy that it will ideally complete as the main course. I adore serving these croissants stuffed with shrimp and some green leaves just as they are. Simple, delicious, and satisfying.Â
How to make shrimp salad?
Shrimp salad is a refreshing and delicious entree that can be easily and effortlessly be done. Just a few ingredients and you will serve a restaurant-like dish just perfect for an ordinary evening or for parties or potlucks.Â
The ingredients:
- 1 pack of shrimp that usually contains 26-30 pieces. Shrimp can be peeled and deveined, or prawns with the shell. It is optional.
- 1 tbsp Old Bay seasoning
- 2 fresh cucumbers
- ½ cup mayonnaise
- 1 tsp Sriracha sauce
- Some green leaves and parsleyÂ
If you are making this recipe at the time you will serve it then thaw the shrimp in cold running water. In case you have already bought the shrimp a day before, keep them in the fridge to thaw themselves.Â
Take a big bowl and bring water to boil. The water has to cover a little the shrimp, so it depends on how much you are going to prepare. Season the water and add the thawed shrimp to the boiling water and cook for no more than 5-7 minutes. The shrimp have to be bright pink.Â
Drain the water from the bowl and cover the shrimp with ice so they will preserve their soft and mild texture. Let them cool down for 10-15 minutes in the ice, and meanwhile, make the filling.Â
On a cutting board chop the cucumbers, parsley, and mix the mayo with Sriracha sauce. Add some paprika flakes and Old Bay seasoning for more flavour and taste.Â
Cut the shrimp and mix all the ingredients together. Take the croissants and cut halves. Stuff them with the shrimp filling and add some green leaves. Serve immediately.Â
