Asparagus topped with an egg on toast is something I never can refuse. This simple appetizer, that needs no much time and mess, is simply a healthy and delish start of the day. This recipe is good with bacon or other kinds of meat, but sometimes there are mornings I want to enjoy the crunchy aromatic asparagus meatless.Â
The ingredients:
- 10-12 asparagus spears, ends trimmed.Â
- 4 slices of bread (anyone you have or like)
- 4 eggs
- ½ cup cream cheese
- seasoning
First, properly wash the asparagus and trim the ends. Some asparagus ends are hard to digest, so better cut them and leave only the fresh-looking spears.Â
For today’s’ recipe, I have decided to saute the asparagus in butter and garlic for a little extra burst of flavour. I adore using a lot of garlic in many of my recipes. This recipe is not an exception as I have used 8 or 10 cloves of garlic. Optional you can add some bay leaves or Rosmarin leaves for more aroma.Â
Cook the asparagus for about 3 to 5 minutes or until brown and tender. They shouldn’t be too soft as you tend to lose their health properties. Meanwhile, the asparagus is cooking, heat another skillet and fry the eggs. Season and cover the eggs to have soft-cooked egg yolks.Â
To assemble the toasts you can either bake them for 3-5 minutes, grill, or use fresh as they are. I baked some of them as I like crunchy toasts.Â
Spread 1 tbsp of cream cheese on each slice of bread. Top 3 spears of asparagus and the egg. Simple, and super tasty. Season some salt or pepper over the toasts. Serve immediately as the eggs are warm and soft.

- These toasts can be made of different healthy toppings. Use avocado slices or mashed, fried bacon, smoked salmon, cucumbers, parmesan and other ingredients you may find really interesting to this recipe.Â
- Avoid cream cheese, or substitute it with sour cream, or some ordinary cheese.Â
- Use hard fried eggs in case you don’t like the soft ones.

- 12 asparagus spears
- 4 slices bread
- 4 eggs
- 1/2 cup cream cheese
- seasoning
- 10 cloves garlic
- 1 tbsp butter
Instructions
- Wash the asparagus and trim the ends. Heat butter with garlic in a large skillet over high heat. Saute the asparagus about 3 to 5 minutes until brown and tender.
- Meanwhile, heat another skillet and fry the eggs. Season and cover the eggs to have soft-cooked egg yolks.
- Bake the bread slices with some drops of olive oil and seasoning about 5 minutes.
- To assemble, spread 1 tbsp of cream cheese on each slice of bread. Top 3 spears of asparagus and the egg.
- Serve immediately and sprinkle serving with some salt and pepper.
