This is probably one of the points I try to avoid complicated dishes cooking at home. Nonetheless, I am always optimistic and still try to overwhelm me and my feelings. So, for this time I wanted to present a restaurant-like dish that isn’t complicated but full of flavours and aromas. My family adore shrimp cooked in all its ways. For this time I opted for fried shrimp over tacos with different adds-in. Spicy shrimp coated in, creamy avocado, sweet corn, and sweet/sour cherries are probably all the ingredients I am lingering after packed in a tortilla. These easy shrimp tacos will surprise your friends at the party table as one of the best appetizers. I am writing about this flavorful garlic shrimp and I am mouthwatering when I remember the taste. Shrimp are easy to prepare, but you have to be attentive not to over grill them to avoid chewy shrimp. This Mexican-dish is one of the most welcomed in my kitchen as it is ready in minutes and gone fast.

For this recipe, I have used frozen deveined shrimp to easily fry and eat them. To devein shrimp or not is a matter of personal preference because if you chose to leave the shrimp with the dark vein it doesn’t harm your body. 

Shrimp is a versatile ingredient truly tasty and flavorful if coated in lots of garlic, herbs, and butter. It can be easily served as an appetizer, for lunch, dinner or as the main course. 

For my recipe, I have fried the shrimp in butter, garlic, herbs and smoked cayenne pepper for an aromatic and irresistible result. 

After the shrimp have thawed, take a bowl and add all the species, olive oil and the shrimp to absorb all the aromas. I add some lime zest for a fresher taste. Let the shrimp coat all the aromas about 10-15 minutes. Meanwhile, take a hand blender and make the avocado sauce. For the sauce, you need 2 ripe avocados, 1 small red onion, and some drops of good quality olive oil. Mix all the ingredients and set aside until you will wrap the tortillas. 

When the shrimp have marinated, fry them about 3 minutes on each side or until nicely pink/golden colour. For not: if you are cooking prawns than fry them 5-7 minutes on each side. 

After the shrimp are ready and cooked, the nice and pleasant moment is coming.

Take 1 tortilla and start greasing with a small amount of avocado sauce. Then start layering: add some fried shrimp (I put 6 shrimp but you can add more or less), chilli pepper, cherries, red onion, corn and top the taco with some cilantro and some sauce. You can wrap the tortilla with any ingredient you like or have. My husband doesn’t like the taste of the sweet corn, so I try to skip it for him. But, I add him more of chilli peppers. 

This simple process is one of the most pleasant and funny. I adore wrapping tortillas with everything. Also, I have to admit, that I have warmed the tortilla just 1 minute in the microwave as I wanted it more like a bread taste rather more crunchy. This is a simple recipe but with a fantastic bursting aroma. There are never too much shrimp tacos in my kitchen. 

How to thaw frozen shrimp?

Thawing the shrimp isn’t a hard process. The problem here lies in when you want to cook them. For example: if you will prepare shrimp on the second day just took off the freezer and let them thaw overnight in the fridge. If you want to cook them faster leave them in cold water. But keep in mind to never force the thaw shrimp process under the running water. Doing this can cause the shrimp to absorb too much water, and you will ruin them. Too much water will make them too soft, mushy, and a big mess while frying.

Shrimp tacos pairs well with many dishes. They are good appetizers, side dish, or as the main course. I like to eat shrimp tacos filled with many veggies just as they are. However, you can easily pair them with a homemade guacamole dip, Roasted Peppers with Feta, Fried Eggplant, or baked Avocado. These tacos can be great next to an Avocado Salsa, or any other fresh salads. Also, you can enjoy and savour this delicious moment with a good quality white wine, margarita, or a shot of tequila.  

What are the best tacos for this recipe?

For this recipe, any tortilla will be suitable. Here the references already depend on your taste and healthiness. For example, I like to eat tortillas made of whole-grain wheat as they are healthier and easier to digest. 

But, you can use corn tortilla, all-purpose flour tortilla, burritos, quesadillas, or any others you like. To feel the authentic Mexican taste, easily use corn-flour tortillas with some chilli aromas.

Recipe tips:

  • Use frozen shrimp or fresh shrimp, or prawns. All of them will be great for these best tacos.
  • If you are warming the tortillas in the oven, remember to use some foil to avoid burning them.
  • Use lime juice to refresh the tacos. 
  • In case you don’t want an avocado sauce, use fresh avocado slices.

Ingredients
  

  • 1/2 pack shrimp
  • 2 avocado
  • 10 cherries
  • 1 red onion
  • 1 clove garlic
  • 1 cup corn
  • 8 tortillas
  • 2 tbsp olive oil
  • Italian herbs
  • 1 lime
  • 1 chilli pepper

Instructions

  • Meanwhile, make the sauce. Take a hand blender and mix well 2 ripe avocados, 1 small red onion, and some drops of good quality olive oil. Mix all the ingredients and set aside until you will wrap the tortillas.
  • Heat the stove. In a skillet add a good amount of butter, some cloves of garlic and the shrimp. Fry about 3-4 minutes on each side or until nicely pink/golden colour.
  • Take 1 tortilla and start greasing with a small amount of avocado sauce. Then start layering: add some fried shrimp (I put 6 shrimp but you can add more or less), chilli pepper, cherries, red onion, corn and top the taco with some cilantro and some sauce.
  • Serve immediately.
