Fantastic Fried Shrimp Tacos

- 1/2 pack shrimp
- 2 avocado
- 10 cherries
- 1 red onion
- 1 clove garlic
- 1 cup corn
- 8 tortillas
- 2 tbsp olive oil
- Italian herbs
- 1 lime
- 1 chilli pepper
Thaw the shrimp. Take a bowl and add all the species (salt, pepper, cayenne pepper, garlic powder), olive oil and the shrimp to absorb all the aromas. Add some lime zest for a fresher taste. Let the shrimp coat all the aromas about 10-15 minutes.
Meanwhile, make the sauce. Take a hand blender and mix well 2 ripe avocados, 1 small red onion, and some drops of good quality olive oil. Mix all the ingredients and set aside until you will wrap the tortillas.
Heat the stove. In a skillet add a good amount of butter, some cloves of garlic and the shrimp. Fry about 3-4 minutes on each side or until nicely pink/golden colour.
Take 1 tortilla and start greasing with a small amount of avocado sauce. Then start layering: add some fried shrimp (I put 6 shrimp but you can add more or less), chilli pepper, cherries, red onion, corn and top the taco with some cilantro and some sauce.
Serve immediately.
