How does a perfect morning look like in your vision?

Personally, I feel the perfect mornings only on weekends when I and my family enjoys a good portion of pancakes with aromatic tea, with no fear of being late for school or work. Winter has more charm with hot tea and something tasty next to you!

American pancakes – you saw them in the movies and you like them, but you always avoid to cook them. Why? Because you didn’t come up with a simple recipe like this. The American pancakes are a little thicker than the French ones, but they are more fluffy and tastier, served with honey, maple syrup or some fruits.  Pancakes are an indispensable and very tasty element of the American breakfast.

In my family pancakes are a popular and frequently cooked recipe, therefore I think it can be a perfect dessert suitable for the little ones, as well.

For a variety of homemade pancakes, I suggest you to cook some delicate and fragrant pancakes with bananas. This simplest recipe will be an excellent breakfast or afternoon snack. This banana pancake recipe is one of my favorites  because it contains fibers and a minimum amount of sugar (bananas offer enough sweetness) and just ideal for my kids.

You can serve them without too much worrying about the figure. I can’t even tell you how fluffy and tasty they are, the subtle sweetness of bananas along with Greek yogurt creates a divine taste.  And if you combine them with a teaspoon of honey or maple syrup you will get fluffy pancakes with the fine aroma of bananas that melt in your mouth, I promise!

How to make Banana Pancakes?

Today I made my pancakes from banana that stayed for about 2 days on my kitchen table. I did not want to heat the oven to bake Banana Bread and decide to do something faster. Overripe bananas are perfect for this pancake recipe. 

I always start preparing pancakes batter with bananas. Take one medium to big size banana and peel it. With a fork or potato masher, mash it well. 

In a bowl beat 3 eggs with a pinch of salt. I do not love too sweet pancakes because usually, I serve them with honey or maple syrup, but I still prefer to add a “touch” of sweetness in the batter. So, when you see egg color lightly yellow add 3 tbsp of sugar. When the egg mixture looks fluffy add 2 tbsp (30 ml) of milk, one 4.9 oz (140 gr) pack of Greek yogurt, and 2 tbsp (30 ml) of melted butter. Beat well until all the ingredients have homogenized. Now add to the egg-dairy mixture mashed banana and mix well.

In a separate mixing bowl sift 1cup (125g) of the flour, then combine it with 2 tsp of baking powder. In the end incorporate dry ingredients into the wet ones. You will obtain thick and lumpy batter.

Let the batter rest for 10 minutes, so the baking powder will activate.

Heat the non-stick frying pan over medium heat without any oil or butter. Pour ½ ladle of batter in the middle of hot skillet (you will get 4 to 5-inch pancakes). If you want smaller size pancakes just use a tablespoon. Cook pancakes until it forms bubbles, then turn it with a thin spatula on the other side and cook for 60 – 90 more seconds. Banana Pancakes are tastier if served warm. If you leave them for the next day, they will strengthen a little. You can serve them with any kind of topping, from homemade or commercial syrups fruit, Greek yogurt, honey, nuts, and others.

What type of pan is best for pancakes?

To make the cooking process faster, you can buy a special skillet named Silver Dollar Pancake Pan. This skillet has individual separate molds that help you cook at the same time perfect size and shape pancakes. But if you don’t have it you can easily cook pancakes on a regular heavy non-stick frying pan.

How to make healthy Banana Pancakes?

This banana pancakes recipe can be easily transformed into a healthier version. You have to skip from all-purpose flour to whole grain one. Also, you have to avoid sugar to make these pancakes healthier and low-calorie. 

If you want them dairy-free replace milk and Greek yogurt with almond or coconut milk and butter with coconut oil.

Bananas make this recipe even more healthy and nutritious. They are a great dietary source of potassium. You will get essential fiber, minerals, vitamins and antioxidants from them.

Tips:

  • Use overripe bananas – they are sweeter and more aromatic.
  • Mash bananas with a fork or potato masher. Small pieces of banana will add a good texture to the pancakes.
  • Mix the dough with the whisk (it can be hand whisk or kitchen robot), so the pancakes will be fluffier.
  • Use baking powder to have more tender pancakes.
  • If your pan sticks, fry pancakes with 1 tablespoon of coconut oil / melted butter. 
  • If I am preparing pancakes in a hurry, for the batter I just place all ingredients at the same time in a kitchen robot and mix them.
