I simply adore this easy and delicious salad and try to make it all year-round as an aside dish to some meat or fish. The beauty of this kind of Italian salad lies in its simplicity, easiness and qualitative ingredients. I have tried more kinds of burrata cheese, but definitely the juiciest and creamy is the one that is so soft, so smooth and so tender and of course of the best quality. I have tried this salad some years ago, and I loved it at once. I liked the smooth and creamy burrata cheese perfectly balanced with some fresh cherries, arugula and some garlic for taste.
What is Burrata Cheese?
Burrata, similar but not the same as mozzarella, is a famous and utterly delicious semi-soft Italian cheese. Very creamy with a buttery consistency unlike any other cheeses, burrata is very fresh, soft, mild and smooth cheese that constantly seduces and melts in your mouth. What makes burrata so special and unique – is what hides on the inside. Although it doesn’t have a rich taste, it will capture your heart with its finest and juicy texture.
What sets it apart, is that it is made of fresh buffalo milk formed into a hollow pouch with a milky flavor and creamy texture. All the magic happens when burrata is sliced and the soft texture for the inside spills out. It is yummy and delicious making it one of the best toppings on a salad ideally served with a loaf of crusty bread and some fresh cherries. My first experience eating a burrata salad was a discovery, why?
It was a perfectly balanced combination between juicy, sourly tomatoes, strong basil aroma and the opposite creamy, soft and finest burrata cheese. If I had to choose a low carb summer dish, then I would definitely go for a burrata salad.
This is when less is more – good food is about fresh and quality ingredients, and this is why burrata proves that point perfectly.
The best part about this salad is that you only need fresh ingredients. No-fuss with heating the oven or tossing any ingredients, I like to keep it simple.
First of all, wash all the fresh ingredients for the salad and wipe with a kitchen paper. In a big bowl, cut half the cherries, add some arugula or fresh basil leaves, season with olive oil, salt, and pepper. For a better and perfect taste, I add 1 minced and chopped cloves of garlic and mix all the ingredients until they have absorbed all the aromas. On a nice plate, I place a fresh small ciabatta loaf, pour the cherry mixture over, top the burrata cheese and sprinkle some balsamic sauce for a nice aspect and a great taste.

- Colorful tomatoes are a good option for a nice aspect and good taste.
- The sourly/sweet taste of the Balsamic glaze is a perfect dressing and a nice decoration.
- First, drown the crispy ciabatta or focaccia into tomato sauce from the salad, so that the bread absorbs the juicy combination of tomato, garlic, basil and olive oil. Then add the mixture on top as described above. You will definitely enjoy it.
- You can use arugula instead of basil.
- You can skip the garlic if you don’t like it, and you can go for onion or none.

Ingredients
- 1 Burrata
- 10 tomatoes
- 200 gr arugula
- 1 ciabatta
- 1 clove garlic
- 1 tbsp olive oil
- 1 pinch sea salt
Instructions
- Wash your ingredients and prepare a large bowl to mix the cut tomatoes, basil, and garlic.
- Cut all the tomatoes in halves.
- Add basil or arugula and the minced garlic.
- Mix and season everything with salt, pepper, olive oil and don’t forget about Balsamic glaze.
- Place the ciabatta loaf on a plate, add the tomato salad, then top the burrata cheese. Sprinkle with quality extra-virgin olive oil.
