As it happens with classic cheesecake recipes, we will start with the crust. Instead of graham cookies, we will use nut flour. Coconut flour also works well in this recipe, but I found almond flour tastier, especially if you toss nuts before grinding.

Add ½ cup of softened unsalted butter and 1 tsp stevia and process to combine ingredients. Transfer the almond mixture to a bowl and mix with a spatula to make sure the composition homogenize. 

Preheat the oven to 350 °F. Grab some muffin liners and line the bottom with an almond mixture. Send them to the preheated oven to prebake for 7-10 minutes. Remove from the oven and set aside to cool a little.

Ingredients
  

  • 16 oz cream cheese
  • 1 egg large
  • 1 tbsp lemon juice
  • 2 tsp stevia
  • 1 vanilla bean

For the sugar-free raspberry sauce:

  • 1 cup raspberry frozen
  • 1 tsp stevia

For the crust:

  • 1 1/2 cup almond flakes
  • 1/2 cup unsalted butter

Instructions
