- 16 oz cream cheese
- 1 egg large
- 1 tbsp lemon juice
- 2 tsp stevia
- 1 vanilla bean
For the sugar-free raspberry sauce:
- 1 cup raspberry frozen
- 1 tsp stevia
For the crust:
- 1 1/2 cup almond flakes
- 1/2 cup unsalted butter
Heat in a saucepan 1 cup of frozen raspberries with one teaspoon of stevia. Once it starts bubbling, lower the heat and simmer for a few more minutes until the raspberries soften and the sauce thickens. Remove from the heat and leat to cool completely.
Toss for 3-4 minutes on dry skillet 1 ½ cups of almond flakes. Cool them a little and transfer to a food processor. Grind till the mixture looks like flour. Add ½ cup of softened unsalted butter and 1 tsp stevia and process to combine ingredients. Transfer the almond mixture to a bowl and mix with a spatula to make sure the composition homogenize.
Preheat the oven to 350 °F. Grab some muffin liners and line the bottom with an almond mixture. Send them to the preheated oven to prebake for 7-10 minutes. Remove from the oven and set aside to cool a little.
Meanwhile, prepare the cheesecake filling. Beat cream cheese with sweetener for some minutes using a hand mixer or stand mixer. Add one egg and seeds from one vanilla bean. Squeeze one tablespoon of lemon juice. Beat again until you obtain a smooth and creamy filling.
Spoon the cheesecake mixture evenly into the muffin liners over the prebaked crusts. Top with one teaspoon of sugar-free raspberry sauce each cream cheese bites. Send mini keto cheesecakes to the oven and bake for 15 minutes.
Serve keto cheesecake bites chilled topped with some fresh berries.
