Spinach avocado with some cherries, carrot, almond flakes is my imagination of how a colourful spring salad could look.
Here you can add asparagus, fennel, green leaves, cucumbers, or any other veggies you have in your fridge—also, pine nuts, nuts, or almond flakes like me.
The core ingredients of this salad are fresh veggies and a simple dressing. I adore such crunchy and fresh dishes served next to some roasted meat or fish. Some add-ins
This salad is versatile as you can mix, add, skip any ingredient you like or have. For example, I adore adding some fennel in salads, but I skipped this point because I didn’t have it.
One of the advantages of making salads, especially when you give parties, is that you can make them ahead, refrigerate, and toss in dressing right before serving. Cut all veggies and store for some hours.
Spinach avocado salad is easily customizable and takes only 10 minutes to make it. Super healthy, bright, and useful this satisfying salad could be a complete meal, as well. There are late nights when I am so tired but want something tasty and not too caloric, so a green healthy salad is always an escape and idea.
Dressing tips:
- I have used a simple dressing made of olive oil and 1 tbsp of white wine vinegar. A simple dressing that pairs great in many salads. So if you are out of imagination to go to, the traditional old method.
- However, here you can make some other more elegant and sophisticated dressings: herb vinaigrette, Dijon mustard with greenies like ( parsley, cilantro, dill), sweeter versions made of fresh flambé fruits, and others.
This spinach avocado salad will be okay with some goat or feta cheese. However, I wanted it vegan and dairy-free.
How to make Spinach Avocado Salad?
Spinach avocado salad is a spring-inspired vegan dish with a delicious and healthy texture. A simple salad with bursting colours that instantly invites you to try it.
Once I decide to make a salad, I open my fridge and see what fresh and nice-looking veggies I have. For this time, I had a fresh pack of spinach, 2 ripe avocado, one carrot, some cherry tomatoes, and for a nice restaurant-looking aspect, I added some almond flakes.
A simple dressing made of olive oil (3tbsp) and white wine vinegar (1tsp), seasoning, and c’est la vie. I took my green olive paste ( or tapenade how Italians are calling it) and greased it over a loaf of sliced fresh bread for an outstanding and fabulous taste. I adore this acidic paste and use it anytime I could.
Take a large cutting board, start slicing avocado, cut halves cherry tomatoes, and shave ½ carrot.
Take a platter and nicely arrange spinach, avocado, tomatoes, shaved carrot and gently mix. Pour the dressing and top some almond flakes. Optional you can add chopped spring onion.
Season with sea salt and pepper and serve it.

- 8 cherry tomatoes
- 1/2 carrot
- spring onion
- lemon juice
- seasoning
- 2 tbsp olive oil
- 1 tsp white wine vinegar
