Mushroom Quinoa is a flavorful recipe and easy as it sounds. A truly delicious side dish or appetizer made of garlic/butter mushrooms, fluffy quinoa tossed in simple olive oil and topped with herbs. Such a healthy vegetarian recipe to enjoy any time of the day.

Making a vegetarian dish is always a trial for me. Some years ago I came across that I want to make my week balanced with meat and meatless days. So on Wednesdays and on Fridays, I try to stay on a vegetarian style diet but with health proteins and truly delicious recipes. This is probably why I am constantly in search of interesting new recipes that not only are vegetarian but are also tasty and savory.

I have nothing against meat, I eat it too, this is why I want to motivate you to detox your body. Anyway, you have to decide, according to your own strengths and needs how will you build your eating habits and lifestyle.

Of course, I did not come across to my healthy lifestyle in one day, but I am truly happy that it is now part of my life. And probably the simplest alternative to preparing diner after the long workday was to order a pizza or take-ago. Just the thought of cooking frightened me.

Now, I discovered vegetarian dishes – some easy and healthy ingredients cooked in just 30 minutes – that’s all you need for almost any of the vegetarian recipes. Just a small investment and in time you will see your life healthier and easier.

There are many more benefits of vegetarian dishes, and I hope I can motivate you to eat vegetables more often so try to introduce them to your daily menu.

Quinoa is classified as a pseudocereal, and nowadays, it became more and more popular in the world due to its health benefits. These seeds are great antioxidants and full of vitamins B and E, as well as calcium, potassium, iron, and magnesium. It is gluten-free, rich in fibers and proteins, as well as enough amount of all nine essential amino acids.

Garlicky Mushroom Quinoa:

Quinoa, is a new product, with many health benefits and truly delicious when paired with roasted garlicky mushrooms. An easy recipe to make on an evening basic, but with so many flavors and aromas. A bowl of healthy mushroom quinoa is just a perfect meatless entree when I seek to eat less meat on some days. It is full of healthy proteins and truly hearty. My family adores when I make such side dishes as it pairs well with any meat, fish, or simply as it is. You can easily add some grated parmesan or some drops of balsamic vinegar to add more aroma and taste. 

This easy to make recipe ideally complement a party table when you have more guests and this entree will be more than just perfect. Creamy, succulent, and juicy – are just some words that a simple, but a healthy dish can have.

For this simple and delicious mushroom quinoa recipe, you need the following simple but full in proteins ingredients for about 6 servings:

  • 16 oz of mushroom
  • 1 cup of quinoa
  • 6 cloves of garlic – I am really obsessed with garlic, and you know it many scientific studies show that garlic is good for health.
  • 3 tbsp butter (I used my homemade herb butter, the recipe is coming up).
  • 1 tbs olive oil
  • 1 tsp Italian herbs
  • fresh parsley for garnish
  • 1 bay leave
  • 1/3 cup of white wine – optional

How to cook quinoa in Instant Pot?

Quinoa itself doesn’t have a pronounced taste and can be used in various dishes. The most widespread type of quinoa is white, red, and black ones. Black and red quinoa are usually used in salads, while white ones for side dishes. 

Quinoa is super simple to prepare in Instant Pot. Rinse quinoa by using a large fine strainer under running water. Transfer it to the Instant Pot. Add a pinch of salt and one bay leave. Pour water over quinoa in a proportion of 2:1. For better taste use vegetable broth instead of water

Close the lid and lock it. Set the steam valve to its “sealing” position. Use the Manual program and cook for 1 minute on high pressure. It will take 8-10 minutes for the pressure to build before the cook cycle begins. When the program is done, let the pressure naturally release for about 10 minutes. Then, turn the steam release valve to Venting to release any remaining steam pressure.  Once the floating valve has dropped open the IP lid. Fluff the quinoa with a fork and set aside.

How to make Garlicky Mushroom Quinoa?

Before you will start cooking this fragrant garlicky mushroom quinoa, splash the mushrooms in water to wipe the dirties. Then absorb all the water with some paper towel. 

In a frying pan add about 3 tbsp of aromatic herb butter and fry 6 cloves of garlic until it becomes golden brown color. Add the sliced fresh button mushrooms and cook, stirring occasionally, for about 10 minutes or until tender. Make sure all the water from the mushroom evaporates. Season with salt, pepper, and dried herbs(if desired) to taste. to enhance its flavor even more add ⅓ cup of white wine and saute mushroom 3-4 more minutes.

Meanwhile, cook the quinoa as it is said above. If you do not have an Instant Pot just boil it on the stove according to package instruction.

Once the mushrooms are cooked, stir in boiled quinoa until well combined. Garnish with some fresh parsley. Serve warm!
