Take a large cutting board and finely cut round slices of 5 medium cucumbers. Optional, but one of the great ingredients I always try to have is the avocado. You can skip it if you don’t have it, but it only makes better your salad if you add 2 ripe and smooth avocados.
Take a bowl and add the cucumbers, the chopped avocados, spring onions, some fresh dill and mix well by dressing the salad with the mayo. You can add here sour cream, plain yogurt, wine vinegar, or anything you like more. I always try to add my home-made mayo when I have such possibilities.

This cucumber salad is made of my home-made mayo dressing. So easy, and much healthier as I know how it is made, and of what ingredients I have used.
Mix 200 g of regular oil with one whole egg (30 seconds), then add 1tsp of mustard and ¼ of lemon juice. Blend all these ingredients no more than 1 minute and et voila, the best home-made mayo is ready to be added.
How to store?
This cucumber salad is served cold this is why you can easily store it in your fridge, but not for too much time. Because cucumbers contain water they release it in your salad, so if you will store it for longer you will have a mashed salad. However, you can slice up the cucumbers a night before you will make this salad, place them in an airtight container, and mix with the dressing before you serve it. This is such an easy and quick salad that doesn’t need to be stored. Enjoy it fresh and green.
