What are the best potatoes for potato salad?

Classic French Potato SaladHere the line is endless as you can use any potatoes you like. One of the most frequently used potatoes for boiling are the famous Yukon Gold, Klondike Goldust potatoes, or Russet potatoes.  

However, I have used purple fingerlings, red potatoes, and Yukon golds. I was a lucky woman to find more colourful potatoes, so if you are that lucky as I, then your plate will look nicer and more appealing. 

Should I cut potatoes before boiling for potato salad?

Yes, you should, as this will help you boil them quicker. Make sure you cut all pieces the same size and then cook them evenly. I cut rounds as I wanted a nice-looking platter with colourful colours. 

Classic French Potato SaladAlso, regardless either to cut or not the potatoes, be sure to peel off the skin. For note, cut potato chunks to boil them quicker. 

How long should I boil potato?

Boiling potatoes depends on the method you are using. If you cut chunks and close the pot with a lid, it may take some 15 minutes. If you are boiling whole potatoes, then it may take some 25-30 minutes. Also, it depends on what kind of potatoes you are using.  

How to make French potato salad?

In my house, I boil potatoes only when I make mashed ones. You can check the recipe here. This was an alternative for me, and I found this recipe easy and worth making. 

As I have already mentioned, I have used purple fingerlings, red and yellow potatoes for diversity and better looking. The purple ones look like radishes, but they are potatoes, as well. 

The ingredients:

  • 6-7 potatoes for three persons
  • Bay leaves
  • Salt

Dijon Vinaigrette:

  • 1 tbsp Dijon mustard
  • ¼ cup white wine vinegar
  • ½ cup olive oil
  • Black pepper
  • Salt

Herb vinaigrette:

  • ½ cup freshly chopped parsley
  • ½ cup dill
  • Spring onion
  • garlic

Take a pot and fill it with water. On a large cutting board cut rounds the potatoes and add them to the pot with water. Season with salt and add some bay leaves. Boil until soft and tender, about 15 minutes.

Meanwhile, take the board and start chopping parsley or cilantro, dill, and spring onion. Take a bowl and add all the greenies continuing with 1 tbsp of mustard, 3 cloves of minced garlic, oil, and wine vinegar. Mix gently with a fork so it looks like a dressing not like a paste. 

French potato saladDrain water from potatoes and place them nicely on a platter. Take the vinaigrette dressing and pour over the potatoes and enjoy. 

You can serve this dish cold or warm.
