There are some key ingredients that really bring moisture to your cake:

Today I opt for bananas. It was only a matter of time before I tried to combine two of my favorite ingredients – bananas and coffee. Actually, I just infused my banana bread with some aromatic espresso – and believe me, the result is unreal!

How to make Coffee Caramel Sauce?
If you a fan of coffee, you will appreciate this homemade coffee caramel sauce recipe. It is the most deliciously decadent, luxuriously smooth, and thicker caramel sauce I have ever tried. Coffee and caramel – a perfect match!
This homemade coffee caramel sauce is pretty easy and quick to make. You will need the following ingredients:
- Brown sugar 1 cup
- Espresso coffee
- Butter 1/2 cup
- Pinch of salt
You will need a saucepan with a heavy bottom to make the coffee caramel. Pour sugar into a saucepan and melt it slowly over medium-low heat without adding water. Stir it constantly with a wooden spoon (or rubber one) until it starts clumping together. At this point, stir in espresso (about three tablespoons of strong coffee). Continue mixing, as it can burn very quickly. Once the sugar melts completely, you will see it bubbling and a deep amber color – stir in the butter cubes. Keep mixing until the butter has melted. Add a pinch of salt at the end and cook until it turns into a deep brown caramel sauce. It will take you about 3-5 minutes.
Switch off the stove and leave the caramel to cool for 5-10 minutes. Then pour it over the cake or transfer to an airtight container and store it for later.
Store the caramel in the refrigerator for up to a month. Remember, once cooled, the caramel will thicken up considerably.

Fluffy, sweet, moist, and coffee – everything you want from your coffee cake or banana bread! Crave both of them at once?! It can’t be easier – combine them! To keep it healthier, this cake is made with all-purpose flour, almond flour, and pure maple syrup.
Preheat the oven to 350°F. In a large mixing bowl, mash bananas. Crack the eggs and mix them with mashed banana. Gradually mix in instant coffee, espresso, maple syrup, and seeds of vanilla bean. Melt the butter, and combine it to the mixture.
Combine sifted all-purpose flour, almond flour, baking powder, cinnamon powder, and salt in a separate mixing bowl.
Add gradually dry flour mixture to the wet one and whisk until combined.
Grease a silicone loaf pan with butter. Pour cake batter into loaf pan. Bake for 40-45 minutes.
Allow the coffee loaf cake to cool for a while before drizzling it with coffee caramel. Enjoy next to a cup of aromatic coffee!
Can you freeze Coffee Loaf Cake?
Definetly! Before you send it to the freezer, ensure you cool it completely. Also, I will advise you not to drizzle it with caramel if freezing. Wrap the cake tightly with plastic wrap, then transfer it into a freezer bag.
Thaw the cake at room temperature. Once you are ready to serve the cake, warm it in the oven or the microwave.
