How to cook codfish?
First of all, I have to mention that I have used a fresh cod fillet. But, you can easily use a frozen one (just take it from your freezer, leave at room temperature until it defrosts) and then use it. As my husband makes the fish, he adores to marinade it for 30 minutes. He uses herbs such as cayenne, garlic, lemon zest, salt, pepper, and some fresh dill. He leaves the fish to infuse all these aromas for about 30 minutes. Then he places them to the baking pan and bake about 15-20 minutes, it depends on the size of the fish. When it gets a crispy skin and a nice golden color, then the fish is ready to be served. Squeeze some lemon juice over the fish and serve it with the best ever white creamy sauce. So simple, so quick, but one of the most appreciated fish with a great taste.
How to make the creamy white sauce?
Take a saucepan, not a big one, but a regular size and melt 100 gr of butter. Add 1 pack of sour cream ( 200gr) and stir about 5-7 minutes until it thickens. Optional, I added 50 g of blue cheese for a thicker consistency, and for a more pronounced taste. For note: I add a shot of whiskey (you can use brandy) to make the sauce’s aroma and taste be out of this world. Believe me, this shot will change your great and creamy taste to 180 grades. Also, red caviar here adds some acidity and makes this sauce unbelievable. Season with salt and pepper and your sauce is ready in less than 10 minutes. It’s worth any word and any time. It is a very universal sauce, one of the best that complete any side dishes.

How long to cook codfish?
Usually, we cook the cod fillet about 15-20 minutes in the oven to obtain a crispy and golden cover. If you want it more dietary, you can bake it 10 minutes, only. But the cover it obtains when it stays longer in the oven is worth it. I simply adore when I have a crispy top and a tender and juicy inside fish meat. The ideal temperature for baking this best fish is 400°F or 200°C.

- 3 fish fillets
- 1 tsp sea salt
- 1 tsp cayenne pepper
- 1 tsp black pepper

For the sauce:
- 3.5 oz butter
- 7 oz sour cream
- 1.7 oz blue cheese
- 1 shot whiskey
- 3.5 oz red caviar
- 1 pinch salt
- 1 pinch pepper
Instructions
- Marinate the fish with herbs and leave it for 20-30 minutes.
- Preheat the oven at 400°F or 200°C.
- Bake the fish for about 20 minutes.
- Meanwhile, the fish is baking, prepare the sauce.
