Yes, you should, as this will help you boil them quicker. Make sure you cut all pieces the same size and then cook them evenly. I cut rounds as I wanted a nice-looking platter with colourful colours.Â
Also, regardless either to cut or not the potatoes, be sure to peel off the skin. For note, cut potato chunks to boil them quicker.Â
How long should I boil potato?
Boiling potatoes depends on the method you are using. If you cut chunks and close the pot with a lid, it may take some 15 minutes. If you are boiling whole potatoes, then it may take some 25-30 minutes. Also, it depends on what kind of potatoes you are using. Â

- Bay leaves

Dijon Vinaigrette:
- 1 tbsp Dijon mustard
- ¼ cup white wine vinegar
- ½ cup olive oil
- Black pepper
- Salt

- ½ cup freshly chopped parsley
- ½ cup dill
- Spring onion

Meanwhile, take the board and start chopping parsley or cilantro, dill, and spring onion. Take a bowl and add all the greenies continuing with 1 tbsp of mustard, 3 cloves of minced garlic, oil, and wine vinegar. Mix gently with a fork so it looks like a dressing not like a paste.Â
Drain water from potatoes and place them nicely on a platter. Take the vinaigrette dressing and pour over the potatoes and enjoy.Â
You can serve this dish cold or warm.Â
