- 3 cups turkey leftovers
- 1 can beans
- 1 medium bell pepper
- 1 can crushed tomatoes
- 1 medium yellow onion
- 2-3 cloves garlic
- 1 handful fresh cilantro
- 1 tsp granulated garlic
- 2 tsp salt
- 1/2 tsp chili flakes
- 1/2 tsp ground pepper
- 1 tsp dried oregano
- 2 cups vegetable broth or water
Shred the meat using 2 forks
Peel and chop the onion and the garlic
Brown the onion and garlic for 2 minutes
Add the shredded turkey leftover to the pot and stir
Season with the spices and cook for another 10 minutes
In the meantime remove the seeds of the bell pepper and cube it
Add the pepper cubes to the pot
Pour the canned crushed tomatoes
Pour the water or vegetable broth
Simmer for 5 minutes then add the canned beans
Chop cilantro and add to the chili leftover
Serve with sour cream, sliced chili pepper and avocado dices
