Italian Style Marinated Cherry Tomatoes

Light and appetizing, the marinated cherry tomatoes are a refreshing escape during hot days and not only. This recipe is about juicy tomatoes covered in garlic & aromatic herbs, and seasoned with the summer perfumed olive oil.

Equipment

Ingredients

  • 500 g cherry tomatoes colorful
  • 3/4 cup olive oil
  • 6 cloves garlic
  • 1 handful parsley
  • 1 handful basil
  • 2 tbsp white wine vinegar
  • 1 tbsp Italian Herbs dried thyme, oregan, basil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Rinse the tomatoes and slice in half. Place in a large bowl
  • Peel the garlic and wash the fresh herbs. Chop everything and place in a separate bowl
  • Pour ¾ olive oil, 2 tbsp of white wine vinegar, 1 tbsp dried herbs, salt, and black pepper over the herbs. Mix well
  • Pour the freshly made dressing over the cherry tomato halves. Gently mix and let marinate for 4 hours.
  • Place the marinated tomatoes in glass jars with lid
