Simple Sesame Soba Noodles

  • 14 oz soba noodles

For the vinaigrette dressing:

  • 1/2 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 cup toasted sesame seeds
  • 1 tsp black pepper
  • 2 tbsp honey
  • 1 cup spring onion
  • 1/2 onion
  • 3 tbsp sesame oil
  • 2 cloves garlic
  • 1 tbsp ginger
  • 1 cup parsley
  • lemon juice


  • Boil soba noodles in salted water.
  • Meanwhile, make the vinegarette. Take a bowl and mix all the ingredients for the dressing. Adjust at taste to obtain a dressing that tastes delicious and tasty, add ginger and lemon at the end to be sure it has a mild flavour and lovely at the taste.
  • Take a skillet and toss sesame seeds for 1-2 minutes until slightly golden.
  • Drain the water and lay noodles on a big platter. Pour the vinaigrette dressing over and mix well until they have incorporated. Garnish with toasted sesame seeds for a better taste and result. Serve as it is or next to anything.
