Grandma’s Recipe Plum Cobbler

- 1 1/2 cup flour
- 1/2 cup almond flour
- 2 tbsp baking powder
- 1/2 cup sugar
- 1 stick unsalted butter
- 2 eggs
- 1/2 cup milk
- pinch of salt
For the filling:
- 1 lb ripe plum
- 2 tsp cinnamon
- 3 tbsp brown sugar
- 1 tbsp cornstarch
Take a bowl and add the cut halved plums. Combine with cinnamon, brown sugar, and corn starch. Mix gently to coat all the ingredients and set aside.
Take another large bowl and start mixing all dry ingredients. Pour the flour, almond flour, baking powder, and a pinch of salt. Shred cold unsalted butter and rub it into the dry ingredients.
In a separate bowl beat eggs with sugar and milk. Pour the liquid mixture to the dry ingredients. Combine all the ingredients just to incorporate.
Take a pie pan and nicely arrange the plums. Take a spoon and gently top the dough. Bake the cobbler for 40 minutes at 180C (350 F).
When the cobbler is ready baked, take it off the oven and let it sit and cool down for 10 minutes.
Take some vanilla ice cream and scoop over the cobbler. Serve immediately.
