Grandma’s Recipe Plum Cobbler

Ingredients

  • 1 1/2 cup flour
  • 1/2 cup almond flour
  • 2 tbsp baking powder
  • 1/2 cup sugar
  • 1 stick unsalted butter
  • 2 eggs
  • 1/2 cup milk
  • pinch of salt

For the filling:

  • 1 lb ripe plum
  • 2 tsp cinnamon
  • 3 tbsp brown sugar
  • 1 tbsp cornstarch

Instructions

  • Take a bowl and add the cut halved plums. Combine with cinnamon, brown sugar, and corn starch. Mix gently to coat all the ingredients and set aside.
  • Take another large bowl and start mixing all dry ingredients. Pour the flour, almond flour, baking powder, and a pinch of salt. Shred cold unsalted butter and rub it into the dry ingredients.
  • In a separate bowl beat eggs with sugar and milk. Pour the liquid mixture to the dry ingredients. Combine all the ingredients just to incorporate.
  • Take a pie pan and nicely arrange the plums. Take a spoon and gently top the dough. Bake the cobbler for 40 minutes at 180C (350 F).
  • When the cobbler is ready baked, take it off the oven and let it sit and cool down for 10 minutes.
  • Take some vanilla ice cream and scoop over the cobbler. Serve immediately.
