Avocado, Radish, Hummus Sandwich

Ingredients

  • 4 slices whole-grain bread
  • 2 cups hummus
  • 1/2 red onion
  • 1 peeled ripe avocado, sliced
  • 5 radishes, very thinly sliced
  • a handful fresh arugula
  • 2 tbsp olive oil

Instructions

  • First, preheat the air fryer to 180C (350F) for 5 minutes.
  • Toast bread slices for 2-3 minutes until slightly crunchy, not dark brown.
  • Meanwhile, slice the avocado and radish and set aside.
  • Start with spreading hummus over the bread, and continue topping avocado slices, radish, red onion, and arugula leaves.
  • Enjoy.
