Fresh Asparagus Salad with Radish

Asparagus salad is all about fresh tastes, healthy bites, colors, and finger-licking dressing that makes this easy and simple salad taste out of this world.

Ingredients

  • 1 bunch asparagus
  • 1 cup frozen or fresh peas
  • fresh radish
  • 1 cup feta cheese
  • 1/2 cup pine nuts
  • basil leaves

for the dressing:

  • 1 clove garlic
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • parsley
  • seasoning

Instructions

  • Blanch the asparagus with some boiling water for 1-2 minutes. The same with frozen peas.
  • Take a big plate and start arranging the veggies.
  • Cut halves of the asparagus, thinly chop the radish, blanch the frozen peas for 1-2 minutes as well and sprinkle pine nuts.
  • Top over the dressing and add some basil or mint leaves for more freshness.
  • Enjoy!
