- 1 Zucchini
- 1 Onion
- 2 Eggs
- 1/2 cup Parmesan grated
- 1 cup Flour
- 1 tbsp Baking Powder
- 1/2 cup Gorgonzola
- 1/2 cup Mozzarella grated
- Salt & Pepper
Grate one zucchini.
Chop one onion.
Add two eggs, salt, and pepper in a bowl. Beat the eggs.
Drain the excess water in the grated zucchini and add it to the beaten eggs. Mix.
Add ½ cup grated parmesan to the zucchini mixture.
Add one cup of flour, one onion, 1 tbsp baking powder, and ½ cup of gorgonzola to the zucchini mixture.
Spread the mixture in a baking tray. Add ½ cup mozzarella on the top of the mix.
Bake for 45 minutes at 350°F (176°C).
