Ingredients

  • 1 Zucchini
  • 1 Onion
  • 2 Eggs
  • 1/2 cup Parmesan grated
  • 1 cup Flour
  • 1 tbsp Baking Powder
  • 1/2 cup Gorgonzola
  • 1/2 cup Mozzarella grated
  • Salt & Pepper

Instructions

  • Grate one zucchini.

  • Chop one onion.

  • Add two eggs, salt, and pepper in a bowl. Beat the eggs.

  • Drain the excess water in the grated zucchini and add it to the beaten eggs. Mix.

  • Add ½ cup grated parmesan to the zucchini mixture.

  • Add one cup of flour, one onion, 1 tbsp baking powder, and ½ cup of gorgonzola to the zucchini mixture.

  • Spread the mixture in a baking tray. Add ½ cup mozzarella on the top of the mix.

  • Bake for 45 minutes at 350°F (176°C).
