- 3 zucchini
- 16 oz sausage
- 1 onion
- 3 garlic cloves
- 1/2 cup canned tomato puree
- 8 oz mozzarella cheese
Wash and halve them lengthwise. Use a spoon or an ice-cream scoop and scoop out the flesh making a hallow canal in length. Drizzle some olive oil, salt, pepper.
Chop the onion and the zucchini flesh. Mince some cloves of garlic. Heat the skillet with 2 tbsp of olive oil. Add onion and minced garlic. Once the onion softens, stir in zucchini flesh and ground meat. Saute everything for about 10 minutes.
Add tomato paste, taste for seasoning, and cook for five more minutes. Now spoon in the filling in hollowed-out zucchini boats. Top with mozzarella.
Bake stuffed zucchini boats in the preheated oven at 350 ºF (180 ºC) for 40-45 minutes.
