- 2 cans white beans 8 oz can
- 8 oz cherry tomatoes
- 1 handful fresh parsley
- 3-4 cloves garlic
- 1 tsp ground paprika
- 1/2 tsp coriander leaf
- 1 tsp salt
- 1/2 tsp chili flakes optional
- 1/3 tsp ground black pepper
- 1/2 cup water optional
- 2-3 tbsp olive oil
Rinse the white canned beans
Peel the garlic and wash the tomatoes
Heat the olive oil in a frying pan
Roast the garlic cloves for about 1 minute
Add the spices, cook for 1 minute
Put the tomatoes into the pan, cook for about 3 minutes
Add the white beans and stir
Add some water if too dry and mix again
Cover with a lid and allow to cook all together for about 10 minutes
Shop some fresh leave of parsley and sprinkle all over the beans and tomatoes
Enjoy hot as well as cold with some bread and sour cream on top
