  • food processor

  • 2 cups graham cookies
  • 1 1/2 cups nuts
  • 7 oz dark chocolate
  • 2/3 cup unsalted butter
  • 1 cup condensed milk

  • Grind 1 cup of nuts in a food processor until you obtain coarse crumbs. Then add 1 ½ cup of cookies and process them together for some seconds.
  • In a separate bowl combine chocolate and butter. Melt them over a water bath. Make sure the bowl does not touch the surface of the water at all. Mix constantly until you obtain a homogeneous mixture.
  • Transfer grounded nuts and cookies to a large mixing bowl. Add the chocolate mixture and condensed milk. Combine gently all the ingredients. Coarsely chop ½ cup of nuts and ½ cup of cookies. Add them to the salami batter and mix again.
  • Once you have a smooth chocolate mixture you can proceed with shaping. For shaping grab a piece of parchment paper or clingfilm. Tip a chocolate mixture on it and firmly roll the dough resembling a salami sausage. Wrap it like candy, securing the ends with an elastic. Send to the refrigerator overnight.
  • Remove the clingfilm or parchment paper and dust it with extra grounded nuts, cacao, or shredded coconut. Slice the chocolate salami into slices and delight yourself.
