Homemade Coffee Cookies
Coffee cookies - a delicious and easy to prepare dessert that will fill up your home with roasted coffee aroma - it makes me go crazy!
- 10,5 oz unsalted butter
- 1 cup icing sugar
- 2 3/4 cups all purpose flour
- 1 1/2 tbsp freshly ground coffee
- 1 one large egg white
Preheat the oven to 320°F. Line a large baking sheet with parchment paper. Attach your stand mixer with a flat beater attachment.
In a stand mixing bowl stir the icing sugar, sifted all-purpose flour, and freshly ground coffee. Add in soft unsalted butter and start mixing the cookie dough at low speed. Once all ingredients are incorporated add one large egg white. Continue mixing until everything comes together.
Transfer the coffee dough to a piping bag attached with any desired nozzle. Grab prepared baking sheets and pipe any desired form of cookies keeping them 2 inches apart. Bake in a preheated oven for about 15-20 minutes, depending on the size of your cookies.
