Light and Healthy Meatball Soup

Equipment

Ingredients

  • 1 onion
  • 1 carrot
  • 1 bell pepper
  • 4 potatoes
  • 8 cups water or broth/stock
  • 2 tbsp olive oil
  • dill
  • parsley
  • salt to taste

For meatballs

  • 1 lb ground meat
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/8 tsp black pepper
  • 1/2 tsp salt

Instructions

  • Take a large soup pot and heat it with 2 tbsp of olive oil. Once the oil is hot add one chopped onion and saute until translucence. Send one diced carrot to the onion and saute for 3-4 more minutes. Add 8 cups of water. As I told earlier you can substitute water with any kind of broth or stock. Bring it to boil and add 1 diced bell pepper and 3-4 cubed medium size potatoes. Let it boil at low heat for about 5 minutes.
  • Higher the heat to medium-high and start adding gently the meatballs. When you see the soup is bubbling lower again the heat to low and let it cook for at least 10 minutes.
  • Take the pot over the heat and add some chopped dill and parsley.
  • Serve the soup with some chili peppers and sour cream.
