Light and Healthy Meatball Soup

- 1 onion
- 1 carrot
- 1 bell pepper
- 4 potatoes
- 8 cups water or broth/stock
- 2 tbsp olive oil
- dill
- parsley
- salt to taste
For meatballs
- 1 lb ground meat
- 1 egg
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/8 tsp black pepper
- 1/2 tsp salt
Take a large soup pot and heat it with 2 tbsp of olive oil. Once the oil is hot add one chopped onion and saute until translucence. Send one diced carrot to the onion and saute for 3-4 more minutes. Add 8 cups of water. As I told earlier you can substitute water with any kind of broth or stock. Bring it to boil and add 1 diced bell pepper and 3-4 cubed medium size potatoes. Let it boil at low heat for about 5 minutes.
Higher the heat to medium-high and start adding gently the meatballs. When you see the soup is bubbling lower again the heat to low and let it cook for at least 10 minutes.
Take the pot over the heat and add some chopped dill and parsley.
Serve the soup with some chili peppers and sour cream.
