Keto Peanut Butter Cookies with Chocolate Chips
The recipe of Keto Peanut Butter Cookies with Chocolate Chips is a perfect treat if you crave something sweet, chocolatey, and tasty but you are on a low-carb diet. For me, who is a lover of chocolate and peanuts, this delicious cookie is more than an ideal recipe, especially because it is prepared in just a few minutes with an amazing aroma filling my kitchen.
Servings: 12 cookies
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/2 cup peanut butter
- 1/4 cup unsalted butter
- 1 egg
- 1/4 tsp stevia
- 1/2 tsp baking powder
- 1 cup unsweeted chocolate chips
- pinch of salt
Preheat the oven to 350°F. Line a baking tray with a piece of parchment paper or use silicone baking mats.
In the bowl of a stand mixer fitted with the paddle attachment star creaming the butter. When you see it is smooth add peanut butter and beat until creamy. Next, add in one egg. Add coconut flour, almond flour, baking powder, stevia, and a pinch of salt. And finely add chocolate chips. Mix for 20 seconds more and stop the mixer. Now cover the bowl and send the cookies dough to the fridge to chill for at least half an hour.
When ready to bake, using an ice cream scoop arrange the cookies spacing them about 2″ apart. Bake them for 12-14 minutes in a preheated oven. When baked, before serving cool cookies on the cooling rack.
